Notes: First All grain batch. Actual OG was 1.042 and FG was 1.010. So ABV should be 4.2. Great black color. Lot of coffee and some cocoa. I hope these flavors intensify after bottling. First time with omega labs yeast Irish ale 005. For this beer, the OLy performed excellent. I left the fermentor in my unheated barn with temps fluctuating between 55 to 65 for 4 days. When outside temps were going to hit the 40s I brought the beer into my house which we keep between 65 and 68. The FG tells the tale, I'm happy with 1.010 and it taste like a solid Irish Stout. Used 3oz priming sugar in 2 cups of water. Bottled 1/29/17. 35 1/2 16oz ez caps. |

Notes: My first attempt at a Fresh Hopped beer. It was a really fun brew day minus picking hops in 86% humidity. There isn’t an option for the type of yeast I’m using. I harvested and propagated yeast from two cans of The Veil Brewing Co.’s BrozNightOut. I’m assuming it’s a mix of an English yeast and American. The aroma from the starter is quite fruity and pleasant. - August 19, 2019

Notes: This recipe is nearly the same recipe out of the John Palmer book - "Brewing Classic Styles".
Items I changed or added:
+Melanoidin malt - was not in original recipe
+Increased Honey Malt from 6oz to 8 oz
+Increased Bittering Hops from .75 oz to 1 oz
+The base malt was originally only British malt but I am a poor bastard and I didnt want to go that route so I split it up. It called for slightly more than a pound less than I have but wanted the gravity to be high and still be in style.

Tasting Notes:
3/25 - Let this beer sit for a while. I had tastes of it a month ago and it was still young and sweet. The malt really came into its own and was worth the wait. You get just a touch of the really dark caramel/crystal flavor with a lot of sweet bready taste from the Maris Otter and Honey Malt. Would make this again seasonally. |

IMPORTANT INFO - DO NOT SKIP.
Mash at 2:1 liquor ratio.
Reiterated mash.
Water chemistry wise, aim for London water but raise the chlorides to around 150ppm.
(I chose English Ale, but when I raise the Chloride to 150 ppm my pH gets too low. Adjust accordingly!)
You will have to stir the mash to avoid a stuck mash.
Add the sugar in two parts – 250g at day two of ferment, 250g at day three.
If making Jonny's Wedding Cake add 500g well-roasted hazelnuts and 3 sliced vanilla pods in mini muslin bags at cold crash. Add 200g cacao nibs after 7 days and condition for the remaining 7 days.
If making Brad's Breakfast add 500g of lactose at the end of the boil. Add 3 vanilla pods and 3 cinnamon sticks in mini muslin bags at cold crash. Add 150g roasty coffee (ideally notes of caramel) with three days left of conditioning.
Carbonate to around 2 vols.
If adding adjuncts DO NOT AGE. DRINK FRESH LIKE AN IPA.
