Smelt really good smelling wort. End of dry hopping. Still looks great and smells great. Force carbonating for a party tomorrow night.

♦ STANDARD BREWING NOTES:
60 minutes – Add 2 drops Fermcap
60 minutes – Add 5 tablespoon Gypsum for IPA
15 minutes – Add Immersion Chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if nozzle is pointed upwards
Create 7 gallons sparge water. Bring to 154° strike temperature.
Prime pump. Push water through hose.
60 minutes – Add tablespoon 5.2 pH balancer.
Add grain – Sparge at 144-152° for ___ minutes (Minimum 60)
(One gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment.
Mash Option dark beers – Add x tablespoon Calcium Carbonate

Purge oxygen with CO2
Chill keg 24 hours before force carbonation.

Notes: $27 half.
Recipe adjusted for bottling i.e. OG left 5 points below required to allow for extra provided by bottling sugar. Same applies to ABV - adjusted for extra 0.5% at bottling.
Briess Golden Light or Amber (if amber no need for crystal grains) - (if crystal needed add 75gms of 60 Lovibond) .
Liquid malt dissolved in fermenter with 1 litre of boiling water.
0 minutes hops added in portions every 5 minutes and 5 degrees of total 20-25 minute hopstand starting at 90c. Ice may be needed to reduce temp by 5 degrees at each stage of hop additions - last addition at 70c.
Increased 0 minute addition due to Throwback IPA recipe tasting quite light in hop flavor - add largest portions at 80c, 75c and 70c to add flavor and avoid actual increase in IBUs.
Yeast also changed to US-05 as Notty seemed to strip hop flavor from Throwback recipe.
In fermenter 10 Jan. OG check showed it low at 1034 but may have been poorly mixed wort. 1015 on 14th. Dry hopped 14th.
OG checked 4 days apart and staying at 1015 - equates to very poor attenuation from S-05 (65%)- expect my calcs were wrong somewhere or PPG for malto is too low.

Notes: I split the batch is two:
I made concentrate from apple juice for the first half: 2 gallons frozen, then thawed to let just the apple run off, totaling 3 qts concentrate. Keg and fridge it so the apple doesn't ferment. Tastes amazing! Apple-Wheat beer.
The second half I did a secondary with 5lb of strawberries. Let the strawberries ferment. |

Notes: One thing to note is that you need to get rid of as much fat as possible. You can do this by buying lean bacon and trimming fat off before cooking. In addition, use paper towels to soak up the grease. Do whatever you can to get rid of that fat. Excess fat (even yummy bacon fat) can reduce the ability to have a head on your beer. |

Notes: I soaked the seeds for four hours then mesquite smoked the hemp seeds in a mesh bag for 2 hours. Crushed the seeds in the bag and steeped with the grains. Get a real earthy taste and a lot of smoke - you have to love a smoked beer to like this - needs at least 4 weeks aging in the keg. Good sipping brew - and quite the novelty.
