Notes: I've brewed this base beer several times with different additions. In the pictures you can see the original, chocolate-vanilla version, which was my very first stout, and one of my best recipes ever.
For vanilla version: when fermentation starts soak at least 2 vanilla beans in vodka until secondary (2 weeks). Be sure to scrape out all the vanilla, chop up the bean to small pieces as well and put everything into a small jar. Shake it up every now and then. Dump all into secondary and transfer the beer on top.
This beer was amazing from the first day, but also aged really well. At the second year mark when I opened the last bottle the vanilla has disappeared, but the beer was truly amazing.
I also highly recommend you try this with medium toasted american oak chips! |

Notes: update 11/26/2018 : there is an egg nog milk stout recipe in brooklyn brew shop's beer making book. it calls for 2 1/2 whole nutmegs (grated), 1 lb lactose, and 3 (!) vanilla beans.

update 11/25/2018 : not sure the original thoughts here but
i think we would need to add vanilla bean, nutmeg and possibly cinnamon. would this be significantly different than GBS? obviously no ginger, but seems similar. adding british ale yeast just thinking maybe i could then piggy back the yeast and make a barleywine, but might be too roastey to reuse....

Notes: For sugar in grain bill, use barbados or some other semi-refined sugar.
Ferment through the primary and then transfer to 10 gallon secondary. Add 8 pounds of sour cherries and 4 pounds of sweet dark cherries. Both should be previously frozen and warmed to room temp. Add a blanket of CO2 if possible. Allow to sit on the beer for 2 to 8 weeks. Rack to a carboy and allow a couple of months to settle out before kegging or bottling. |

Only sparged minimally. Too much grain for me to sparge at the moment, so need a bigger bucket.
Came out with an fg of 1.028. Mash at lower temp? Tastes rich and sweet, bitterness is masked nicely. Perhaps more choc grain next time to improve the roasty flavour? |

Notes: Add approx 5.5 gallons of water to kettle and begin to heat (boil volumes should be 0.5 gallon short of target to account for volume of oat milk to be added). Add bag with carapils until water temp hits 160 degrees F. Squeeze bag and continue to heat until boiling. Once boiling, add malt extract. When dissolved add first hop addition and start boil timer. At flame out, add oat milk from fridge to bring temp down to 170. Start hopstand for 15 min then cool with chiller. |
