Notes: 1. Mill your adjunct to the same degree of fineness as you mill the malted barley for your main mash, or slightly finer.
2. Add 1.25 of Crushed 6-row to 3 pounds of raw wheat
3. Add 10.5 quarts and heat to 156 and dough in until you hit the starch gelatinization temperature of 136-147. Hold the cereal mash at this temperature for about 20 minutes.
4. After the 20 -minute rest, slowly heat the cereal mash to boiling, and allow it to boil for 30 minutes, just as if you were making oatmeal. Be sure to stir frequently to prevent scorching. This would be a good time to start heating the strike water for your main mash.

5. Once the 30-boil is complete, the starches are fully gelatinized and ready to be converted by the enzymes in the main mash.

1.5 qt/lb mash thickness. Single infusion mash at 152F for 90 mins. Mashout to 168F.
60-90 min fly sparge with ~6 pH water. Collect 13.9 gallons in boil kettle.
Boil for 60 minutes. Lid on at flameout, start chilling immediately.
Cool wort to 66F and aerate well. Ferment at 66-68F until complete.
Rack to brite tank (secondary), crash chill to near freezing (if possible), add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and let clear for 2-3 days |

Notes: Step Infusion
1. Add 3.5 gallons of 140°F water to the crushed grain, stir, stabilize, and hold the temperature at 140°F for 30min
2. Add 2 gallons of boiling water, bring up to 155°F , hold for 30min
3. Raise temperature to 165°F , sparge with 1.5 gallons of 170°F water
4. Collect about 6 gallons of total wort
BOIL SCHEDULE
0 min: Add 1oz of Hallertau
30 min: Add 1oz of Saaz
40 min: Add 1oz of Saaz
50 min: Add .25 oz Irish Moss
58 min: Add 0.5 oz Saaz
60 min: End Boil and cool
5. Move to fermentor (total volume 5 gal)
6. Pitch 34/70 yeast at 70°F
7. Ferment at 55°F for about 1.5 weeks **Add T-58 Yeast on day 5**
8. Move to secondary
9. Let sit at 45°F 9 days
10. Add 1 oz Saphir dry hop for 5 days
11. Warm to 70° and bottle |
