55 grader i 15 min (proteinsteg)
63 grader i 45 min (beta-amylasesteg)
72 grader i 15 min (alfa-amylasesteg)
77 grader i 5 min (utmesk)

Hop varieties; Hallertauer Mittelfruh, Tettnanger, Hersbrucker. Acceptable North American substitute is Mt. Hood.
Mash times values are rest times. Not time it takes to reach temperature.
90-120 minute boil. First hop addition 15 mins in. Second is 30 mins later.
Filter to 2-3 microns. |

Notes: Make 1L yeast starter at least 48 hrs prior to brew day.
Taste: Not a lot of maltyness, slight bitterness, not too much of a fan of the hop flavors.
Color: Color is perfect for a blonde ale - not a lot of sediment
Smell: Nise crisp smell with a slight florally aroma.
Things to Change: Change base malt from Golden Promise to Maris Otter. Try switching the order of the hops, or switching altogether. |

Filter hops by putting a 5 gallon paint strainer bag into the primary and pouring wort through the strainer before pitching yeast
Rehydrate US-05 prior to pitching
1) Warm the dry yeast to room temperature
2) In a sanitized container, prepare 1/2 cup of sterile water at 95-105°F
3) Sprinkle the dry yeast on top of the water, trying to avoid setting up large, dry clumps.
4) Let sit 15 minutes, then gently stir.
5) When the yeast has reconstituted, gently stir again to form a cream and let sit another 5 minutes.
6) Carefully and slowly, adjust the temperature of the yeast to within 15°F of the wort temperature.
7) Pitch the resultant cream into the fermentation vessel, ideally as soon as possible. |
