Tastes pretty good. Light and refreshing. Lemon flavor is a little more prominent than expected but still good. Maybe use less lemon zest or different hops. Tastes more like a pale ale than a wheat beer probably because I only added wheat extract. Partial mash malted wheat or flaked wheat and base grain to get it more wheaty. But lemon pale ale works just as well! |

Notes: Pitch at 68F until the beer reaches 50% attenuation, then allow the temp to rise freely. Total fermentation time is about 80-90 hours. Add dry hops while the beer is still warm at the end of fermentation. Rouse hops with CO2 every other day for 15 minutes. After 5 days crash cool to 30F over 48-72 hours. Hold another 7 days while continuing to rouse with CO2 until day 13. Bottle/Keg on day 14. |

Notes: Mash PH 5.2 - Mash out 76c for 10mins. Rehydrate 33g of yeast in 2lt at 30c boiled water for 15 to 20mins. Chill to 18.5c into fermenter. Ferment 5 days then rack to 2nd. Leave for 2 weeks then keg/bottle. Leave in bottle 1 month then enjoy. Carb around 2.0
