Single infusion mash at 155° F (68° C) for 60 minutes. Add first wort hops (FWH) as wort is being collected in the boil pot. Boil for 60 minutes, following ingredient additions as listed. Turn off heat and let temperature drop to 198° F (92° C), then add the whirlpool hops and let stand for 30 minutes. Chill to 70° F (21° C), transfer to a fermenter, and pitch yeast. 2 days after pitching the yeast, add the first dry hop additions (1 oz Citra; 1 oz Mosaic) . After active fermentation has stopped, typically 4-5 days after pitching the yeast, add the second round of dry hops (1 oz Citra; 1 oz Mosaic). A day later, burp your fermenter (if possible) with a 30 second burst of CO2 to rouse the hops. Just before kegging your beer, bag and add last dry hop additions (1 oz Citra cryo; 1 oz Mosaic cryo) to the keg. Enjoy! |

Named after the amount of hops (210 g), recipe inspired by Stone Brewing's Ruination IPA
OG: 1.062
Two tubes of WLP001 California Ale yeast added
Fermented at a stable 21 degrees Celsius
FG (after 7 days): 1.010, unchanged after 11 days
ABV: 6.8 (possibly rising to 7 after carbonation)
Packaged after 15 days, Coopers carbonation drops added
Taste note after 8 days in the bottle (almost no carbonation): Crisp and fruity taste. Dry. Not much aroma. Should have been dry hopped. |

Toast rolled oats in 325ºF/163ºC oven for approximately 1 hour. Some notes in thread about leaving them in a bag to cool down overnight, but some that skipped the cooling step in main forum thread.

After starting fermentation, make up spice and raisin tincture. Split and scrap the vanilla bean and put all of it into the bourbon. Let soak for at least a week. Filter with coffee filter and pour into bottling bucket or keg.
Add tincture to taste. Some report that 4-5 oz is enough, others say not enough.
Added raisins to the tincture for more of a raisin kick. Cut raisins coarsely and add to bourbon with spices.
Substituted the inverted turbinado sugar for Belgian Candi Syrup D45 according to a comment that inverting didn't make a difference and someone else saying they made this sub. I think the point here is "brown" sugar that isn't molasses.
Yeast recommended WLP002, but WY1968, A09 Pub, Safale S-04, and Danstar Nottingham are all decent subs.
