Notes: For the dry hop it was suggested to cool the wort after primary fermentation down to 55* for 24-48 hours to drop the yeast and other sediment. Transfer to secondary for dry hop for 4-7 days. Transfer to keg or bottling bucket for packaging. This extra step while not crucial likely helps reduce the bitterness and enhances the fruitiness of the citra hops.
This batch could also benefit from a few weeks of conditioning. Young heavily citra based beers have been reported to have off flavors. The flavor seems to greatly improve after 2-4 weeks of aging.
Note: Lawson reportedly uses Gambrinus malt as the base for some of his beers. The pale malt wasn't available so I substituted with their ESB malt. This will add slightly more color and malt flavor than the pale malt. |

Denny Conn's Rye IPA
Hop and Spicy!
This is another recipe created by Denny Conn and made popular around the various internet forums. It is a hoppy, refreshing, West-coast style IPA with the added spicy layer of Rye.
It is quite light in color and has an easy-drinking, medium body. The hops provide a flavorful hop base while not being too biting.
The Beer
This IPA starts with a somewhat standard bill of 2 Row and some 60L Crystal for color and a bit of caramel and sweetness. Interesting, Flaked wheat is added for a bit of texture and, along with CaraPils, helps head retention. What makes this beer somewhat unique is the addition of 3 pounds of Rye. Rye adds a spicy, somewhat crisp, and perhaps peppery flavor to this IPA.
The hop treatment is US West Coast with Columbus and Mt. Hood hops providing the clean, citrus, refreshing bitterness. The First Wort Hopping technique is supposed to impart a smooth aroma/taste addition that is comparable to about a 20 min. addition.
The hopping schedule is finished off with a dry hopping addition of Columbus hops to give this beer a refreshing taste and aroma. |

…being Seymour's all-grain, research-based clone recipe of Harvey's/Harvey & Son/The Bridge Wharf Brewery - Lewes, East Sussex, UK
6 US Gallons = 5 Imperial Gallons = 22.7 Litres
FERMENTABLES:
88.1% = 7.75 lb = 3.5 kg, Maris Otter Pale Malt
6.8% = .6 lb = 272 g, Dark Crystal Malt (≈90-115°L)
5.1% = .45 lb = 204 g, Flaked Maize (don't skip this essential adjunct, trust me)
MASH ≈ 152.6°F/67°C 60 minutes or until converted.
SPARGE ≈ 171°F/77°C, collect 7 US gal/5.8 Imperial gal pre-boil, to allow for evaporation
BOIL 60-90 minutes
HOPS:
.9 oz = 26 g, Progress, ≈6.3% AA, 60 minutes
.9 oz = 26 g, Bramling Cross, ≈6.5% AA, 30 minutes
.5 oz = 15 g, Fuggles, ≈5% AA, at flame-out, steep until cooled
.5 oz = 15 g, Goldings, ≈5% AA, at flame-out, steep until cooled
afterwards, STEEP all hops awhile before chilling, transfer to fermentor, aerate, then pitch.
YEAST:
Harvey's proprietary dual-strain, top-cropped and repitched for over 50 years, possibly available as BrewLab Sussex 1, also used by nearby micros such as Rectory

Notes: Ferment in primary 7 days, or until fermentation slows. Siphon into secondary and add the dry hop schedule. Leave for 5 days, add gelatin (optional) 3 days prior to bottling and cold crash in the fridge. Bottle at room temperature and condition at room temp. for 21 days, chill 3 days, enjoy.
This clone recipe is a "hop explosion" in your mouth. This West Coast IPA is sure to be a hit with East Coast hop-heads.

Notes: NOTE: My whirlpool temp is quite high, so whirlpool hops contribute bitterness - I guess my final IBU ~ 30. I would recommend more bittering hop for everyone else.
