Briefly, . . . I used my environmental chamber at work to effectively lager the brew (ale yeast), basically, drop the temp to about 52F, and added oak probably 3 times. Each time soaking in bourbon and adding all soaking bourbon, too. I probably added bourbon in 1-2 week, periods then removed, first the cubes, then the spirals I bought. All new wood. This time, I'll use the same wood, but I've had the cubes in bulliet rye whiskey for about two months now. I think, maybe Maker's. No straight Whiskey. I saved the bottle. This time, I'll shoot from the hip and age in my closet, but the Nov. temps should be nice for ageing (ave ~ 60F). Add oak around T-Day and age as long as I can wait, or until Xmas. Bottle on Dec 11th to have ready for Xmas. ONly 2 wks ageing :\ . . . New Year Beer ?

Heat the water to boiling and add hops. Boil for 45 minutes and add the Irish Moss. Boil 15 minutes more, then turn off heat and chill beer to 68° as quickly as possible. Rack to the primary fermenter and pitch the yeast. After primary fermentation has completed (2-3 weeks), dump the 10 pounds of frozen cherries in the bottom of the fermenter and rack the beer on top of the cherries. Ferment in secondary for as long as you can stand it. I recommend a minimum of two months. Then, bottle with corn or cane sugar to 2.5 volumes of CO2.

Probably the best brew i have done this year. All my mates have commented on it and can't believe its homemade. even won a blind tasting contest amongst other well known beers. Was made as a lighter version of Sierra Nevada's celebration ale - which also came out wonderfully- i had a lot of cascade and centennial left so just knocked this up as a lighter session ale. its very citrusy and floral when young - but ages beautifully and was best after 2 months when the hops had mellowed out.

Rebottled 2weeks later using 90g table sugar.
