Notes: Bring 10L water to 72*C and add grains (preferably in a nylon bag). Adjust temp as needed to remain stable at 67*C for 60 min. Shift bag lightly as needed to ensure water has maximum contact with the grains. Prep sparge water by heating 10L water to 76*C. In final 5 min of infusion, raise mash temperature to 76*C for mash out. Lift grains from wort and place in large strainer above the kettle. In batches, slowly sparge the grain bag over the course of 10 min. Boil volume should be close to 20L after sparge. Top off to 23L. Following hop schedule as noted. Add LME at 15 min. Cool to <26*C and transfer to fermenter. Aerate and pitch 2L yeast starter. Ferment in primary for 7-10 days, transfer to secondary. Chiffonade perilla leaves, removing any woody stems. Add dry hops and perilla leaves in separate nylon bags. Ferment in secondary for 10-14 days or until desired flavor is achieved. |

Notes: 1. Bring 2.0 gallons of water to 160 degrees
2. Allow to cool to 155 degrees and keep it there and add all the grains. Keep the grains steeping at that temp for 75 minutes.
3. Sparge grains with 2.0 gallons of warm tap water.
4. Add extracts and bring to boil.
5. Once boiling, add 0.5 ounce of Saaz and 0.5 ounce of Styrian hops
6. After 25 min of boiling add the orange peel, crushed coriander, and remain hops in a hop bag.
7. After a total of 30 min of boiling, remove wort from heat.
8. Cool wort in ice bath to at least 85 degrees and transfer wort to a fermenter.
9. Top off fermenter with previously boiled and cooled water to 5.25 gallons and stir
10. Take an O.G. reading
11. Add yeast to fermenter and stir. Ferment for 1 week and take a S.G. When appropriate transfer to secondary.
12. Bottle beer after 2 or 3 weeks and keep in the house around 68-70 for a week.

Notes: Add wheat malt at end of steeping and cool to 110-120 F (46 C). Steep 3 oz (80 g) of pilsner malt in a bag for 1-3 days, or until desired sour flavor has developed. Then boil for 15 minutes with hops.
Make sure to sterilize steeping bags before use.
I steep using 2.5 L of water, and souring is done in a zip-lock bag, with air squeezed out. Bag is submerged in a water bath with temp maintained with a sous-vide wand.
Normal BE recipes use uncracked grains. I used the remainder of my cracked ones, because I had them. |

The other thing step mashing allows is for rests at the optimal temperatures for beta amylase and alpha amylase as well as a controlled temperature ramp from the beta rest to the alpha rest. This to me is the real key to step mashing because it gives the brewer the ability to increase wort fermentability. Most highly dry beers have a long rest at 140 °F (60 °C) for beta amylase and then a slow ramp up to 158 °F (70 °C) for the alpha rest. The result is an increase in wort fermentability as compared to infusion mashing at a single temperature. |
