Notes: I'm using no flavor or aroma hops for that Dry Stout malt flavor. I'm hoping the Chocolate will be the pronounced flavor, along with the raspberry below.
USING EXTRACT FOR AROMA:
I've used this Aroma technique before - the higher the IBU's, the more extract you can put in the keg without overdoing the flavor. For example, if you get the IBUs up to 85, then you might put the entire 4 oz bottle in the keg if you want to taste the flavor a little.
With high IBUs, you can use more flavor extract without huge flavor, BUT the aroma is amazing. Example, 86 IBU Irish Red Ale with 3 oz of Blueberry extract - couldn't taste the blueberry, but you could certainly smell it. |

| Notes: Put only one cup of Liquid Malt in boil at 60 minutes, added the remainder at 3 minutes. Started boil with 3 gallons, it reduced to about 2.25 or so. Topped off with about 3.25 gallons if ice water. No chiller needed! Dry hopped with 2 ounces of Cascade and 1 ounce of Pallisade at 7 days. Racked to secondary at 14 days, also dryy hopped with one ounce of Citra whole cone in a bag. Plan to store inside for three days then cold crash at day 17 outside (average daytime temp about 54 degrees, night time about 38 degrees). |

Notes: This is my 7th iteration of this brew.
Brewed on Feb 7th for a quick hit beer
Steeped grains with 2 gal H2O. Sparged with 2 gals 174º H2O.
Added 3 gals H2O to boil. (oops added a gallon too much).
Brought to boil and added hops and adjuncts per schedule
Chilled with wort chiller.
Pitched yeast at 74.3º
O.G reading is 1.052
Fermented at 70º
2-19-2022
Racked to second carboy and kegrowler. (I was traveling or would have done this sooner).
S.G. 1.009
Moved to 60º storage
March 2, 2022
Bottled 32 pints, 2 quarts and 2 -12 oz and the Kegrowler.
with 4.5 oz of corn sugar
Again a winner recipe with fabulous remarks from all who shared.
April 25, 2022 a few bottles left to tied me over until Bock is ready.
