Notes: Split the vanilla bean, scrape out the seeds, and chop the casing. Add the paste and casing to a small jar and cover with vodka, about 1 ounce. Let this steep for one week. This is called a tincture. The alcohol extracts all the flavor from the vanilla bean for a more expressive profile in the beer.
If using vanilla extract: Use 2 ounces of pure vanilla extract per 5 gallons of beer. The extract will give you a nice vanilla profile but not as fresh and bright as the whole bean.
Adding pectin to the boil, in the form of apple puree, is a great hack to ensure your beer has a permanent haze and a thicker body. Core and peel 5 Granny Smith apples (per 5 gallons of beer) and puree in a food processor. Add the puree with 10 minutes of boil left.
Chill to yeast pitching temperature, 68F (Ferment at 68-70F)
Add first dry hop addition at high krausen, usually after 1 or 2 days
When signs of fermentation stop in the secondary fermentor, add the second dry hop, fruit puree, and vanilla bean tincture. Allow the fruit to fully ferment, at least 3 days.
Optional: If desired, swap flaked coconut in secondary with 2-3 drops of coconut extract per bottle |

Notes: Actually will try IMPERIAL YEAST A30 Corporate; tasted this at a recent event and found it to finish dry and clean (not in list at time). According to imperial it’s seasonal.
Space dust can be bitter, using Simcoe for LOW Co-Humulone. My source of Amarillo (Farmhouse brewers supply) is not to my liking. Instead going towards orange and tangerine with the Azacca and Pacifica hops. (Hence, "Space Dust No-Am")
I mash grains in large spaghetti pot and dunk into boil pot and sparge once or twice. they seem dry and gravity is close so it's quirky but it works for me. still confused about efficiency, overshot slightly on O.G. (1.090 vs predicted 1.086) |

Notes: Brewed 30 Apr 2022. Partial mash (60 minutes) at 168F initial dropping to 140F after an hour using Brew in a Bag method, reheated and removed grains at 165 F.
Used Tom's house brand Spring Water, but mix of tap and ro water for boil and mashing. Used Muslin bags for boil hops.
Pitched yeast at IG 1.058 @ 68 Degrees F (Corrected). Screened out hops prior to putting wort in carboy.
Dry hopped 12 May 2022 - added to carboy.
Bottled 15 May 2022.
Drank first beer a week later. Good head already, nice bitterness and hop aroma.
Kind of mix of New England and West Coast styles.
