Notes: Re-hydrating yeast:
Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 27°C ± 3°C (80°F ± 6°F). Leave to rest 15 to 30 minutes.
Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
Ferment between 15 and 20 C. |

This was a memorial beer in honor of our little terrier mutt, "Tater," who passed away recently at the age of 14. Like its namesake, it's a little cloudy, not particularly heavy, strong, or bitter. |

Ale yeast 1st until dopped around 50%. temp 20deg c
reduce temp to 7 deg v. Pitch lager yeast.
Await gravity to max out then carry out diacetyl rest 17deg c
Result:
Racked to corney.
Forced carb in corney @ 30-40 psi rocked for 20 min twice.
Dispensed 5 hrs later through tap at 6 psi.
Great taste though hazey. Well balanced carbonation at tap.
Also Bottled 10 x 500ml.
Stored @7 deg for 2 weeks. Beer clear.
Fruity front taste. Looking for the crisp aftertaste but not there.
Suggest pitching lager yeast earlier @ 40% (1030). |

Notes: Boiled off quite a bit more than expected but still managed to get between 5.5-6 into the fermenter.
Expect 1.5gal/hr with the power turned to 3 o'clock for most of the boil.

Once sacc starter and lacto vials were pitched, I started a 1L funk weapon starter and added the 400mL funk weapon #3 after draining half. So 1200 ml total
After 4 days, drained 400ml off top, swirled and put 400ml in storage and rest in fermenter.
