Notes: Ferment at 15 PSI for 3-4 days, then at around 1.020 raise it to 30 PSI to carbonate. Add gelatine to the keg, transfer it in, let it clarify for a few days until pulls clear.
Brewday:
Went okay, did it while working. Ended up with ~24L of 1.052 wort. Would have been higher if I boiled down to 23 like planned, but boil off was lower then expected.
Still getting odd readings on the refractometer. its calibrated. I'd blame stratification but I really stired the wort up before taking them. I had read 1.055 at knockout but was 1.052 with hydro. Validated hydro is RO water to be 1.000.
Pitched at ~ 1PM, 22c, lager yeast :o 15 PSI on it and spunding valve attached. Test here is if its gonna taste good even at these temps. I dont have control batch, so it'll really be a "do i like this beer"
Hoping for a clean ferment. Will see when activity starts. Starter was 100G/L and was 1.5L, so ~ 300 Billion cells i think. not lager pitch rates!
Day 7 sample tasted fairly clean, looks like 1.012 or so for gravity.
Brew #2, got the OG higher. Brewday good, sample pulled cleared out so wort should be nice. Ended up with 23 L on the nose. Pitched around 2, gonna keep it at 15psi whole time, finish up carbing in the keg while it clarifies.
Did a hands off brew day, like hour of mash, 75m of boil to get volume lower. Changed recipe up as I had some warrior kicking around, used it for bitters and just moved all the sazz to 15m
Day 8 sample. about 1.016? Not 100% sure but that or 1.015. Sample was okay, clearly needs some time to clean up, didn't taste amazing. Last brew of this took a while in the keg before it was good. Plan is to let it be in the fermenter until friday, cold crash over the weekend, then rack to purged keg with gelatine. between CC and time in keg to clear, I'm expecting it to be delicious!
To note, no off flavours. Found it a bit bitter, but it was warm and not carbed. Some youngish flavours i can't describe, might have just been yeast in suspension. |

1.1 18 Liter water aanzuren tot 5.4 en voorverwarmen naar 62 graden
1.2 Mout schroten op 165mm
2 Maischen
2.1 mout storten en 45 minuten bij 62 graden
(Ph meten na 5 minuten (beetje maischpap pakken deze terug koelen en dan meten voor een accurate waarde. Verwachte benodigdheden: 3ml om van 5.7 naar 5.4 te gaan, anders per ml toevoegen roeren en nameten)
2.2 verwarmen naar 72 graden
2.3 is 15 minuten bij 72 graden
2.4 verwarmen naar 78 graden
(tevens spoelwater voorbereiden 10 liter op 78 graden)
2.5 is 5 minuut bij 78 graden
2.6 Betadinetest uitvoeren: een eetlepel maischpap nemen, laten afkoelen en een druppel betadine toevoegen op een wit schaaltje, beetje schudden, controleer de kleur (bruine kleur is goed, paarse kleur is langer maischen op 72 graden)
3 Spoelen
3.1 is 10 liter spoelwater aanzuren tot 5.4 en voorzichtig doorgieten (let op maischbed niet verstoren en niet droog laten lopen opgieten met lepel eronder)
3.2 SG waarde bepalen met refractometer.
4 Koken
4.1 Water verwarmen tot 100 graden en 60 minuten koken
4.2 Meteen styrian goldings toevoegen
4.3 Op 10 minuten voor einde koken de Saaz toevoegen en de koriander met de sinasappelschil.
4.4 Apparaat uitzetten en SG waarde bepalen met refractormeter:
5 Koelen
5.1 Koeling in stelling brengen
5.2 Terug koelen tot circa 22 graden
5.3 Gistvat + slangen ontsmetten
6 Wort aftappen
6.1 Wort aftappen in gistvat
6.2 Gist s-33 over het wort heen strooien
6.3 Gistvat afsluiten met water slot en op circa 22 graden rustig wegzetten.

Na 1 week DRY HOP toevoegen: Pellet Mosaic 15 gram en Citra 15 gram

7 Bottelen totaal drie weken: water koken, goed af laten koelen in een normaal glas (i.v.m. doodgaan gist bij hogere temperaturen) zodra water 22 graden is 2 gr F2 gist er overheen strooien, dit 5 minuten laten rusten i.v.m. dat gist moet hydrateren, na 5 minuten goed doorroeren. Nu nog een keer 5 minuten laten staan.
7.1 Bier overhevelen naar schoon vat, aantal liters bepalen, SG bepalen met hydrometer
7.2 In brewersfriend priming calculator berekenen hoeveel suiker erbij moet. Richtlijn is 7,5g/l bij exacte SG waarde
7.3 Suiker oplossen in warm water
7.4 Lichte kolk maken in vat, gistpap en suiker toevoegen aan kolk en vat 15 minuten laten rusten.
7.5 Flessen vullen en kroonkurk erop. |

The intent of the collaborative brew (nearly 1000 breweries in 37 countries as of this writing) is to "Raise awareness for the injustices people of color face daily and raise funds for police brutality reform and legal defenses for those who have been wronged."
The recipe isn't exactly the original. Weathered Souls encourages us to be creative. I have used Flaked Rye in place of Flaked Barely. Being Canadian I thought that would go better with the roasted rye, eh? Plenty of other little changes... my first recipe with 10 different grains in it. (Maple Syrup was also added during the boil when it was clear the sugar level was lower than expected.)
I reduced the relative quantities of the most roasted grains. The resulting wort was an amazing combination of sweet chocolate, coffee and toffee flavours with little harsh burnt taste.
This recipe was made specifically for a 50L/45L All-in-One electric brew kettle. e.g. Arsegan EasyBrew, Brew Monk Magnus and others. As this will be a full mash basket, I achieved 64% efficiency instead of 74% or more. A 90 minute mash (or longer) is recommended for good extraction.
Brewed with Amsterdam (NL) tapwater and lactic acid additions until the pH was 5.2. No salts.
These calcs are for an 7.4% ABV Oatmeal Stout and have been refined based on the results of first brewing on June 30, 2020. |
