Notes: I set the efficiency down to 65 percent for a High Gravity brew but then considered using Reiterated Mashing. I split the grain in half.
Plan to use about 6 oz of bourbon - prepare 2-4 oz in a small jar and immerse the oak chips during fermentation. Add the chips and all the bourbon after fermentation. BTW - Some suggest to toss the Bourbon that soaked the chips to reduce the tannins...if you do that, youll need more Bourbon to taste.
Used Reiterated Mashing Techniques this time in conjunction with splitting the wheat and oats between mashes...worked great.
I am removing the DME (did not need it) and replacing it with Swaen Brown Supreme - 1lb...this should help with the body thinness and head retention and round this beer out further. I do BIAB in individual bags, so I did not need rice hulls.
Ended up 67% efficiency. Didnt use the DME at all. Finished the brewday, Aerated with 2 minutes pure oxygen, used 1 tsp of yeast nutrient, 1 whirlfloc tablet. Get the bourbon and start preparing the wood chips 9/3/2022.
Larry used REDEMPTION Pre-Prohibition branded bourbon.

Wild Turkey 101 - Cheap but burny - might do well in a RIS.
Makers Mark 46 - Supposed to have a complex vanilla taste
Jefferson Reserve - Uh, breaks the bank but NICE
Buffalo Trace - Vanilla, Mint, Molasses
Bulleit KSB - Rye forward
Eijah Craig Small Batch 1789 - Vanilla, Nuts, Molasses, Sweet
Time to go get the bourbon (I chose EC 1789) and put 4 oz with my LD Carlson Mocha Oak chips so they can booze up until it is time to secondary.
Fermentation: Using Wyeast 1762 Scottish Ale - Nothing much in first 36 hours, after that, I got a Krausen blowout and fermentation kicked into high gear...steady stream of CO2 in my blowoff vessel. Maintained for 5 days, then it slowed. Fearing a stall, I ramped the temp to 65 and later to 67. I get a burp of CO2 every 30-40 seconds now (Day 8) and I have a nice bed of sediment and clear dark beer. I ramped to 70 for 3-5 days to ensure complete attenuation and I will grab an F.G. sample at that time. Sample tested with hydrometer: F.G.: 1.021.
Purged the Secondary with CO2. Problem: I am using the Big Mouth Bubbler with the depth charge. One - its hard to get the beer in it without making the purge pointless. Two - I can get the oak out of solution anytime I want, which is nice. Three, I found a way to re-purge using the spigot and a length of tubing, so, after I added everything - I cleared the headspace with more CO2.
Now for 10 days bulk and I will pull the wood. Finally 6 weeks in secondary...then keg/bottle.
Placed in Secondary 9/??/22 with chips and bourbon - ended with 5.5 gallons.
This beer is off the chain GREAT...keeps getting better.
3 gallons gone on 9/10/22. Dark Mocha head, massive chocolate notes, boozy. Everything Dragons Milk should be...next time (Yes, there WILL be re-brews) try to add additional sweetness...it is nearly PERFECT. Cheers! |

Notes: Weyerbacher "Tiny" Recipe
I contacted weyerbacher through their website and asked for help with a clone recipe, this was the response I received a couple of days later:
Since most homebrewers use a program to calculate recipes and each person has their own mash efficiencies I'll give it to you in Malt percentage, which they should be able to plug into their calculator for their particular setup
Muntons Pale * * 68%
Chocolate Malt * * 8%
Crystal Malt * * * * *5.4%
Carafa Special Type III * *5.4%
Flaked Oats * * * * 5.4%
Wheat Malt * * * * *5.4%
Rice Hulls (In Mash, not milled, to help with run-off) *2.4% or 1lb for up to 10 gallons
Approximately .5lbs of sugar per 5 gallons added preboil
Preboil gravity should be about 1.103 (with sugar)
Post Boil gravity should be about 1.113
90 minute Boil
Hops:
At 60 Minutes from End of Boil
Bittering - Apollo @ 19.1 AA% approx. (.5oz for 5 gallon, 1oz for 10 gallon )
At Boils End
Aroma - Saaz @ 3.2 AA% approx ( .75oz for 5 gallon, 1.5oz for 10 gallon)
Fermentation:
Yeast: Wyeast 1214 Belgian Abbey, atleast 2 smack packs or make a starter
Oxygenate with stone if possible, otherwise use whatever means available
18 Degrees C until primary fermentation is complete
Final Gravity Target: 1.024 at 78% attenuation
After primary, rack off yeast or rack to secondary and lager at 10 degrees C for 2 weeks
Chill to 0 degrees C for 1 week, Rack to serving vessel or bottling bucket for carbonation and packaging
Typical fermentation time from start to finish is usually 4 weeks

Outstanding! I have made this probably 4 or 5 times now. It is the #1 beer on tap. I have hit the numbers almost perfectly every time, and it is exactly Tiny. I use Marris otter though, and chocolate wheat (dehusked, not bitter) in place of their equals in the recipe. But it's perfect. In FAAAAACT.....
They just held their first ever homebrew competition. I entered this base beer with chocolate and chipolte, and it took 3rd place overall! This was my first ever competiton to enter, so I was super stoked.
Truth be told, I brewed the competition beer in July. Let it age until November. In OCTOBER they released the same damn beer with peppers. It was a dead ringer for the beer I brewed for the competition (well, in fairness, I was brewing their clone and entering it back to them ). Could not believe it. So, being that the prize was to brew a batch on their equipment and have it served at the tap room...doesn't surprise me that it didn't win it, lol.
However, the master brewer for their new beer (Sunday Mole') was one of the ones that judged my beer, and placed it. He came up to me while the public pouring session was going on, and congratulated me. He said "That's my Mole'" you brewed. I laughed and explained the timing of it all and poor luck on my end, and he laughed. He said still, it did very well in the back, and I actually wished I had more of the flavor that you had come through.
Super big compliment, and I give this recipe raving reviews. It is an awesome beer, versitile, and you can change the chewy-ness based on the mash temp. This is a perfect big stout.

| Notes: Brewer Notes: The most likely place for this brew to fail is during fermentation. Overpitch yeast, add yeast nutrient like Superfood or Yeastex, control fermentation temp and remove from yeast as soon as fermentation is finished. Start fermentation at 19°C and then turn up to 25°C @ 1.074 SG (usually about 48 hours into fermentation). You will probably not hit 1.020 AE so do not worry if fermentation stops as high as 1.032. Yes, you did read the OG correctly. I’d suggest maxing out your mash tun with grain and sparge as little as possible. If you aren’t able to get that much sugar out of the mash you may boil for longer and/or add a 50/50 mix of DME and Dextrose Corn Sugar to the boil to hit your OG target. Disclaimer: This is a very difficult and expensive beer to brew at home. |
