12 lb Mecca Grade Lamonta Pale Malt (85%)

Mash:
Single Infusion mash at 152 F (65 C) for 60 min
Water (ppm): Ca: 128, Mg 9, Na 39, Cl 219, SO4 130, HCO3 0
Add to 8 gal (30 L) spring water: 5g Gypsum, 3g Epsom, 3g NaCl, 10g CaCl2
Adjust mash pH to 5.2-5.6 with lactic acid or slaked lime if needed.
60 min - Add 0.55 oz (16g) Magnum (13% AA)
20 min - Add 0.25 oz (7g) each Citra (14% AA), Simcoe (12.9% AA), and Amarillo (7.7% AA)
0 min - Add 0.25 oz (7g) each Citra (14% AA), Simcoe (12.9% AA), and Amarillo (7.7% AA)
Dry Hop with 1.75 oz (49g) each of Cryo Citra, Cryo Simcoe, and Cryo Amarillo (or 3.5 oz (98g) of each non-cryo hop) from days 7-12 at 60 F.
OG: 1.072
Yeast: Wyeast 1318 London Ale III
Ferment at 68 F (20 C) with no added pressure for the first 7 days or whenever primary fermentation is done, soft crash to 60 F (15 C), dump yeast after 24 hours, and add dry hops, allowing 5 days of contact time while spunding to 10-15 PSI (.67-1 bar). Cold crash to drop hop debris and package with closed pressure transfer.

Notes: Taste profile is a creamy mouthfeel with dark chocolate/mild coffee finish.
- Toasted flaked oats for 15 minutes @ 350, stir, repeat in 5 minute increments until golden brown.
- Toasted cacao nibs for 10-15 minutes @ 300, stirring half way through. Check at 10 to make sure small pieces aren’t burning. They should smell like brownies.
- Created a tincture for the cacao nibs using vodka and soaking for several weeks.
- I added the tincture and nibs to the last 15 minutes of the boil to remove most of the vodka and leave the cocoa flavor. |

Notes: - Get White Labs WLP002 English Ale yeast if available.
- Mill grain twice. Use fine-mesh grain bag to minimize pumpkin getting into the wort.
PREP PUMPKIN
- Use pie pumpkin and/or butternut squash (if brown ale) about 10 pounds in total weight (to yield 3-5 lb net per 5-gallon batch).
- Halve the pumpkin, remove pulp and seeds, and cut the halves into pieces about 6 inches long. Arrange the pieces on a foil-lined cookie sheet, and sprinkle them liberally with brown sugar. Roast in the oven at 375°F until soft (approx 1.5-2.5hrs). During roasting, the brown sugar will melt and caramelize onto the pumpkin, providing extra flavor. Remove from oven and let cool. Peel off the skin, dice into large cubes (being sure to save the juice for its color and flavor), mash to a pulp, and store in a covered bowl in the fridge. On brew day, let the pumpkin warm to room temperature.
MASHING
- Don't leave heat on after meeting mash-in temp (163)
- Take about 1/2 gallon of the hot mash water before adding grain, add it to the pumpkin and stir to break up big clumps, yielding a slurry.
- Add all grains and stir, then add warm pumpkin slurry to the mash.
- Test pH after 10min...see Water Chemistry section.
- Mash-in will likely drop temp by 6degrees
- Mashing will likely drop temp by 10 degrees per 60min
- Range goal is 156 - 141 during the 90min mash
BOILING
- After sparging and while boil kettle heats up, move mash bag to over spare kettle, squeezing & letting drain. Add additional wort to boil kettle.
- Ferment in basement to keep room temp around 70degrees. |

2 tasses de sucres ont été ajoutées soit 400g dans la recette comme indiquée
La densité initiale mesurée est de 1,058 soit 6, 3 %
Infusion de 120 minutes.
J'ai comblé le 5 gallons jusqu'à 3 po du bord soit environ 22 litres.
Le moût était plutôt houblonné comme une Ale et le malt (le goût) n'était n'était pas trop présent.
25 Janvier: Embouteillage de 19 litres de bonne bière houblonnée (pamplemousse surtout) avec un goût sec (pas malté). À l'oeil, je dirais que la bière fait 6% d'Alcool.
J'ai ajouté 100 g de dextrose au moût pour le CO 2.
La bière goûtée à 3 reprises sur 3 jours différents (à partir de la 4e journée annonce un breuvage fort bien houblonné avec une finale SÈCHE :). Le résultat est prometteur!
