Notes: Getting rid of the last of my grains, so using at least a bit of everything I have on hand (except golden naked oat- nobody needs that shit), as well as lots of different hops. So put it all together, and you get a Black IPA. More crystal malts than I'd normally use in a modern IPA, so adding the sugar, and lower mash temp, to dry it out a bit.
Because of all the different crystal malts, I’m mashing all my dark grains (compared to mash capping; I want the extra bitterness to balance the extra sweetness).
This will be 2.5 finished gallons into keg. Expecting 0.25 gallon loss to both trub and hot side hops, and maybe 0.15 gallon loss to dry hops. So want 2.9 gallons into fermenter. I lose 0.6 gallons during the 60 min boil, so start boil with 3.75 gallons. Will lose about 0.35 gallons to grain absorption in BIAB mash, so total water needed will be 4.1 gallons. Use 2.75 gallons in mash, and 1.35 in sparge.
Might split the dry hops and do two rounds. |

| Notes: Brewing on a 9 Gal Brewzilla 110V, so I aimed for a thinner mash (2.00 pt/gal) to achieve a lower 'sparge' volume for ease during the brew day. I also added a protein rest, but this is not required and can be substituted by adding 1.5 lb of rice hulls to the mash. |

Plan:
1) Grate potatoes in food processor
2) Load into muslin bag
3) Add water until potatoes are covered
4) Rest at 104 F for 30 minutes
5) Rest at 131 F for 30 minutes
6) Decant ~ 1/2 of liquid
7) Rest at 180F for 30 minutes (Gelatinization)
8) Boil for 30 minutes
9) Cool mash back to 140F
10) Add liquid from 6) back to mash
11) Mash at 149F for 90 minutes

| Notes: Supposed to be based on Ballast Point Sculpin, but I don't think it bears much resemblance. Over-attenuation again, so we're at almost 8% here, even though the body doesn't reflect that amount of alcohol. Smells better than it tastes. I get this weird over-ripe grape note that I've gotten on other pale ales and IPAs over the last few years. Not sure if it's some kind of ester or hop derived. This is fine, but not what I wanted it to be. |
