Notes: 1. Add 4 gallons distilled water to brew pot.
2. Bring water to 156 and add oats and corn
3. Steep for 15mins then rinse with cold water to achieve 7gals
4. Add 7 lb sorghum extract and candy syrup.
5. Bring to a boil. Stir to prevent scorching.
6. Place bitter hops in large tea ball (don’t compress). Add to brew pot when mix boils. Boil for 45 minutes.
4. At 40mins add Mt Hood hops.
5. At flame out add honey and aromatics.
6. After chilling wort to 75 pour into primary fermentor and let sit for 2 weeks at 64-70.
7. Strain and rack into secondary fermentor and let claify for a week.
8. Bottle.

Notes: Single Decoction. After the first mash rest of 146 F for 30 min, pull off 1.5 gallons of thickest mash and boil for 30 min. Added back to full mash for a rest of 153 F for an additional 30 min. Total mash time is 90 minutes.
I roasted some great wester pale ale malt at home. I roasted 2 lbs. of malt in a Pyrex pan for 30 min at 350 F. The American Victory is my best guess for what it will be.

Notes: Split dry hop into 3 additions after fermentation ends (run low CO2 while opening fermenter) after soft crash at 58F (bring back up into low 60s before adding hops). Run two days per addition and then cold crash (~2 days) and package.

Temp dropped to 58F on 13-FEB-20, after 24-48 hr add first round of dry hop blend (with PRV open while gas on)
Temp bumped to 62F and 4 oz of dry hop blend added on 14-FEB-20. Temp bumped to 66F after ~12 hr as no dry hops were visible on surface (all sank).
Second half of dry hop blend added on 15-FEB-20. |
