Notes: 1) Add 4 gal of water to boil pot
2) Steep grains for 30 mins @ 145F
3) Remove grains (3.8 gal remaining in pot)
4) Add Munich and Pilsen Light LME to pot (4.3gal in pot)
5) Bring to a low rolling boil (203F at 5000ft)
6) At 45 mins remaing in the 90 min boil, add 1oz Mt. Hood hops
7) At the last 15 mins of boil, add 1/2 whirlfloc tab
8) At the last 5 mins of boil, add 1oz Saaz hops
9) Sanitize fermenter/airlock
10) Add 10lbs of ice to fermenter bucket(1.2 gal water), Add wort to fermenter. (5 gal total with -.5 gal boil off in pot)
11) Add 34/70 lager yeast and 10ml Brewzyme-D (ALDC) when temp has dropped below 60F
12) Cap/Shake the hell out of fermenter.
13) Take gravity reading when ice has melted (target 1.051)
14) Ferment for about 1 week at 55F. When bubbling has stopped in airlock, take gravity measurement (target 1.008).
15) Rack to bottling bucket with 5oz dextrose, mix well. Alternatively if carb drops are used, place one drop into each bottle and rack from the fermenter into bottles.
16) Bottle and age bottles for 1 week at room temp to carbonate/condition (warm maturation)
17) Chill in fridge for 2 weeks @40F (cold stabilization)
18) Enjoy! Keep bottles in the fridge to keep yeast dormant.
19) Come back to Brew Fort for more ingredients! |

Notes from AHA recipe:
Mash grains at 155°F (68°C) for 60 minutes. Ferment at 65°F (18°C) and condition for 30 days.
Boil Time: 90 minutes
Substituted Northern Brewer Hops for Northdown Hops (are not available) and substituted Crystal 60L tor Crystal 70L.

Whirlpool Method:
1. Add Whirlfloc @5 mins left on boil, Add yeast nutrient as desired.
2. cut flame/ heat and whirlpool with hops in kettle for 5-10 minutes
4. Take out Hops and wait (whirlpool?) another 10 minutes
5. Cold Crash after this rest period
They're Fuller, Smith & Turner, though their products are simply called Fuller's.
This ESB has won more CAMRA awards than any other beer. It was chosen as Britain's best strong ale seven times and was three times selected as the Champion Beer of Britain. The amber ale reveals a rich malt character and is noticeably aggressive on the palate. Many drinkers pick out an orange-citrus essence, which is characteristic of the house yeast. It finishes with a hop bitterness that lingers without harshness. |

Notes: Clone of Cast Iron Brown Ale from 4 hands@ St Louis,MO. My wife loved it --so happy wife, happy life.
Reviews says obnoxious amt of choc and roasted barley --so doubling as starting point from basic recipe.
Update --It is very good and easy drinking-- It could go even more Choc and barley, but I am a newbie to the all grain brewing so I tend to error on the side of continuing to be able to drink my own beer. :)

Notes: Making a Czech style octoberfest or a Czech amber lager. Didn't have German Pils or German Noble Hops on Hand. Using dry bohemian lager yeast at 55 deg then will step up as it begins to ferment out. Might go a little colder to start but based on the pitch rate it seems like 55 would be a little better.
Don't have Munich I but a ton of Munich II so trying to get through it. |
