Notes: Place extract in hot water for 20 minutes. Chop 5 habanero chilies. Bring 3 litres of water to a boil, add sugar, DME and the habaneros. Boil for a couple of minutes. Transfer to fermentor. Add liquid extract. Stir. Fill up with cold tap water (total 20,5 l). Stir again, and oxygenate. Pitch yeast / kveik slurry. Add dry hops and passionfruit puree on day 2. |

Notes: Mash pH came out at 4.8 after 30 mins, could have been an anomaly since it was the very bottom of the mash and/or sensor needs recalibration. I doubt it was actually that low since OG of 1.054 indicates 78% efficiency which is the best I've ever gotten. |
