Notes: Recipe is taken from James Morton's book 'Brew'. He recommends overpitching the yeast for the most banana esters, which combining with the caramel from the malts give the Banoffee flavour. Mango Jacks description for this yeast seems to suggest that most malt character is stripped away during fermentation. We shall see. The result ought to be a very tasty beer in any case.
1.052 preboil..way off. Think this is due to my mash tun overshooting on the mash temp. Often sits above 70...
1.048 OG....1.8 litres chilled water added after boil
4 litre sparge. 2 litres tap water added during boil.
(Using new hop spider and wort level did not come up high enough to submerge the bottom of the hop spider)
20 litres into the fermentor.
Sample gravity at Day 5 1.016...wow...this yeast is a monster. Will test again on day 8.
No movement, so bottled on day 8. Sample tasted very nice. Can't to taste it after a week. Will there be banana?
1 week post bottling there was detectable banana but not loads. But a very complex and sumptuous, thick beer. Two weeks after bottling and, oh my word, this is something very special. Such a rich toffee flavour. Deep and satisfying. Perfect Xmas brew. Will definitely do again. Will rename to Toffee-bomb dunkelweizen. |

For the first week ferment at 18 deg c then raise up by 1 deg c per day until reaching 25 deg c. Hold until FG is reached and stable for 3 days.
This yeast has a very very high attenuation rate, it can often ferment to SG 1,000 |

Notes: This is stupid easy.(no boil) . you just need a 2.5 gallon fermenter. I used Costco (TM) apple cider, they do not use a preservative. You can buy the apple juice in 2 packs. Dump half a gallon into the fermenter ... then add a pound of sugar to the remaining 1/2 gallon.. shake to dissolve, put that into the fermenter. (every pound of sugar you add is about 2.7% abv, adding more sugar is fun, but not necessary). As you add the 2ed gallon, pout half in the fermentor, and shake to entrain some air to make the yeast work better.
There is no foam in the fermenting. I kegged after 2 weeks in the fermenter, had the keg sit for 2 weeks then tapped.. I am told the longer you let it sit the better, but it was very good... poured over ice is acceptable. |

A 7.2% rye IPA loaded with grapefruit notes, pithy citrus, and huge resinous bitterness, with rye character. The Centennial and Columbus flavours are amplified by the spicy, dry rye. Be prepared for a long sparge as the rye content is really high.
