Notes: Double Decoction:
*Note: This uses a double decoction method with an initial protein rest, but I use well enough modified malts and correct for this so the first of the decoctions is unnecessary. The decoction measurements below are ones developed for an electric system and err on the side of caution, so they are the lower amounts needed to potentially reach the next temperature step and direct heat can be applied to compensate.*
Perform a protein rest at 125F for 15min, then pull off slightly less than 1/3 of the thickest mash and place it in a separate pot. Bring the pot slowly up to 154F and hold for 15min, then slowly bring it up to a boil and proceed to boil for 10min. Stir often so the grains do not burn, but try to allow some 'browning' to help darken the colour and enhance the flavour/aroma profiles. Add the decoction back to the 125F mash, little by little, aiming for a beta rest temperature of 148F. Hold this temperature for 30min while adding back any leftover decoction (if any) as it cools. After this has finished, pull off roughly 1/6 of the thickest mash a second time and place it in the separate pot. Slowly bring the pot up to a boil and continue to boil for 10min. Add the second decoction back to the mash, little by little, aiming for an alpha rest temperature of 154F. Hold this temperature for 30min while adding back any leftover decoction (if any) as it cools. Once this rest has finished, raise the temperature up to a mash out rest of 169F and hold for 10min. After the decoctions and mash out are finished proceed to sparge/lauter as usual.
Fermentation:
Begin at 50F and raise to 60F over 10 days. Hold at 60F for 17 days. Raise to 65F and hold for 11 days. Lager for 4 weeks.

Notes: Belle Dock is a huge American barley wine formerly brewed by the now-defunct New Haven Brewing Co.
Adjust the bittering hops to be at 17.5 HBU.
Ferment in primary for 7 days or until fermentation slows. Then move to secondary and add the dry hops.
3 days before bottling, prime the beer in the secondary with Danstar Windsor ale yeast or WLP099 super high gravity ale yeast.
Bottle when fermentation is complete with 300ml (1 1/4 cups) Muntons Extra Light DME boiled with 2 cups water.
This beer is ready to drink in 9 months after bottling. It will peak in 10 to 16 months and will keep at cellar temperature for 2 years. Serve in brandy snifter at 60F. |

Notes: 1. Bring the wort to a moderate but rolling boil, add the Burton Water Salts and set a timer for 90 minutes.
2. At 60 minutes, add the pre-measured bittering hops and Irish moss.
3. With 10 minutes left, add the yeast nutrient
4. At the end of 90 minutes, flame-out and add the flavoring hops. Actively steep this hop addition while monitoring the temperature.
5. When the temperature drops to 180F, add the aroma hops. Actively steep until the temperature drops to 170F.
6. Immediately start cooling the wort to about 75F.
7. Aerate, take a gravity reading, and add the yeast. Move the fermenter to an area that will remain 70F or so throughout fermentation. Ferment for 7-10 days until FG is reached and the beer is clear. After fermentation is done, add the dry hops and condition for another 7-10 days.

Notes: Quickly chill wort to 60°F.
