| Notes: Meant to make this a pale-ish ale with heady/cannabis aroma inspired by New Belgium's Hemperor. First time using multiple hop varieties and had trouble deciding how much to use and when. Accidentally got distracted by the style section and fussed with IBU and SRM, decided I needed more DME for absolutely no reason and ended up with an IPA with a higher gravity than I usually prefer. We'll see how it turns out! |

Nestled along the spectacular Columbia River in the town of Hood River, Oregon, pFriem Family Brewers is surely one of the most scenic places to enjoy craft lager in the US. Melding an appreciation for European tradition and technique with a Pacific Northwest flair, pFriem's exploration of lager beer has stretched beyond its classic Central European origins. This award-winning Japanese-style lager combines delicate floral aromatics with a snappy, satisfying finish.
Batch volume: 5 US gallons (19 L)
Original gravity: 1.044 (11°P)
Final gravity: 1.007 (1.7°P)
Color: 2 SRM (3.7 EBC)
Bitterness: 17 IBU
Alcohol: 4.9% by volume
GRAIN BILL
Adjunct Mash

5 oz. (142 g) US Pilsner malt

YEAST
German lager yeast, 34/70 strain
BREWING INSTRUCTIONS FOR 5gal/19L
Adjunct mash: Using a boil kettle as a mash-lauter tun, combine rice grits and 5 oz. of Pilsner malt at a liquor-to-grist ratio of 3.5 L/kg. Heat to 195°F (91°C) and cook for 20 minutes to gelatinize starch.
Main mash: Mash in the remaining malt into the same vessel with a cold strike temperature (Josh says they use a strike temperature of 128°F, or 53°C). When combined, the total mash should be 144°F (62°C); rest for 21 minutes. Step up the mash temperature to 154°F (68°C) and rest for 27 minutes. Mash out at 174°F (79°C).
Boil: 80 minutes
Fermentation: Ferment at 54°F (12°C); raise to 62°F (17°C) for a diacetyl rest once the gravity reaches 1.018 (4.5°P).
Conditioning: Lager for 6 weeks at 35°F (2°C).

Hop Substitutions
If the Willamette hop is hard to find or if you are simply out of it on brew day, you can try to substitute it with a similar hop. The old way of choosing replacement hops was done by experience and "feel". There is nothing wrong with that way. However, we wanted to build a data-driven tool to find your Willamette substitutions.
