1-2Kg ginger according to taste
Peel the lemons avoiding the pith. Also add the juice.
Yeast is Crossmyloof Ginger Beer yeast with nutrient
Instructions:
Sanitise and rinse all equipment (Baby bottle sanitising tablets do the trick)
1. Boil as much water as you can get in your stock pot, peel the lemons (avoiding pith), then throw in the peel and squeeze in the juice.
2. Grate the ginger (skin too) and throw in along with the cream of tartar.
3. Add sugar and reduce temp to simmer for about 30 mins.
4. Add 300g of Sultanas to the fermenter then pour the liquid on top and fill up to 23 ltrs with water. Once cooled to fermentation temp sprinkle the yeast on top.
5. Cover and ferment for 4 days.
6. Strain and squeeze the juice from the liquid and transfer to a clean fermenter until complete (usually about 5 / 7 days).
7. Bottle in strong glass (or PET) bottles, suitable for carbonation, adding 1/2 teaspoon of priming sugar to each. |

| Notes: 3.5 bushels of Kiefer pears. That made 6.5 gal of must. Used campden tablets crushed, 1/gal. The variety is a desert pear and very sweet. They need malic acid to balance sweetness. I ferment in uncontrolled environment and need a hardy yeast and use either Voss or Hornindal. I ferment to dryness and fine with gelatin and back sweeten with xylitol and bottle prime with honey shooting for 2.6 to 2.8 CO2 vol for very nice sparkling fruit wine. |

CellarScience® Nectar Dry Yeast | 12 g
1 x Nectaron® Hop Pellets 1 oz.
Bring to a boil Ultralight Liquid Malt Extract to a boil, careful not to scorch at the bottom of kettle/s. After 30 minutes of boil, turn off and add a hop sack of Nectron hops and Dried sweet orange peel and let steep for just 30 minutes. Turn off and let cool until 80 degrees F., Pour kettle/s into fermentor. Then pour in dried yeast into fermentor. When fermented, bottle a minimum of one month or longer at room temperature.

Notes: Using up odds and sods and looking to create a nice hoppy fruity summer IPA. Using Yeast slurry from Nottingham Ale yeast. Hoping to be a hoppy slightly sweet malty light coloured Ale.
Crush grains half at size 5 speed 2.5 and half at size 6 2.5 speed.
Achieved 53L in fermentor at 1.045 73.13% efficiency which is lower than my usual. Fast Mash and very fast Sparge so was expecting a reduced efficiency.
No mid mash stir. Very clear wort after only 30 mins Mash.
Forgot yeast nutrient and Protofloc.
Very active ferment within 12 hours. Reached 1.035 18 hours. 1.024 in 36 hours. RAPT Pill and Temp controller now slowly raising temp over 3 days to 24C. Pill reads a bit high, was 1.055 at start when the wort was actually 1.045. Pill gets more accurate as SG drops. |
