Notes
3.5 bushels of Kiefer pears. That made 6.5 gal of must. Used campden tablets crushed, 1/gal. The variety is a desert pear and very sweet. They need malic acid to balance sweetness. I ferment in uncontrolled environment and need a hardy yeast and use either Voss or Hornindal. I ferment to dryness and fine with gelatin and back sweeten with xylitol and bottle prime with honey shooting for 2.6 to 2.8 CO2 vol for very nice sparkling fruit wine.
