Notes: 1) Add graham crackers (4 packs - 8oz) on top of mash, wet and lightly mix.
2) Add pecans (12 oz roasted then chopped) to mash after mash in on top of mash.
3) Add dark Karo Syrup @ 10 min.
4) Add brown sugar @10 min.
5) Add 6 oz Pure Maple Syrup to secondary after heating to 170 for 10 minutes then colling to 70f.
6) Add 2 vanilla beans to secondary.
7) Add 1 Table spoon Pecan extract to taste at bottling to 5 gal.
8) Add 1 Table spoon Vanilla Extract to taste at bottling) to 5 gal.
9) Add 3 oz pure Maple Syrup to taste at bottling after heating to 170 10 min then cooling.

Notes: İlk Mash
25 L su ile 6 kg malt kullanılarak mash yapıldı. Mash sırasında 10 ml laktik asit, 6 g kalsiyum klorür (CaCl₂) ve 4 g kalsiyum sülfat (CaSO₄) eklendi. pH 5.47 olarak ölçüldü.
Sıcaklık programı: 67 °C’de 45 dk, 71 °C’de 20 dk, 77 °C’de 5 dk (mash-out).
Ön şıra yoğunluğu 1.060 olarak alındı.
Sparge 1 ve Toplama
9 L sparge yapıldı ve yaklaşık 27 L şıra elde edildi. Bu şıranın yoğunluğu 1.048, pH değeri ise 5.51 olarak ölçüldü.
İkinci Mash
Toplanan şıra üzerine ikinci mash uygulandı. Bu aşamanın ardından first wort yoğunluğu 1.095, pH 5.35 olarak ölçüldü. Hacim yaklaşık 13 L idi. Ardından 9 L sparge yapıldı.
Sparge 2 Sonrası
Hacim 22 L’ye ulaştı. Yoğunluk 1.100, pH 5.35 olarak ölçüldü. Bu aşamada 10 g kalsiyum klorür (CaCl₂) ve 5 g kalsiyum sülfat (CaSO₄) eklendi.
Kaynatma ve Eklemeler
Kaynama sırasında 500 g şeker ilave edildi. Kaynatmanın son 30 dakikasında lokumlar eklendi. Whirlpool aşamasında ise 100 g Türk kahvesi eklendi.
Son Ölçümler
Kaynama sonrası elde edilen hacim 18 L oldu. Son yoğunluk (OG) 1.127, pH ise 5.08 olarak ölçüldü. |

EXBEERIMENT: Out of Pale Malt and needed something to boost SRM so bought 3 Kg of Marris Otter. 4.03 SRM it's still below beers 123/124 with crystal and about the same as classic NEIPA recipies. Can't recall is I used Galaxy and Centennial before.
- DH. 75gr of each hop into each ferm.
- OG 1048 (2 pounts lower than expected), but my start mash was 63C and finish was 62c, so perhaps that's it. water was the normal 75C so perhaps go 76C.
- Expected OG 1050 and got 1048 and only 71%.
- Put a layer of wort on ferm and added yeast and then filled. No shaking for oxidation (these are verdants instructions!)
TASTING
Drank against HJ. The flavor of mine just isn't as good. Aroma is less and I just don't get those incredible hops flavours. My finish is similar. Mine isn't bad... just not HJ great. New yeast? Mine is old?
KEGGING
FG 1008, low likely on account of stiring in yeast, so good idea. 5% beer. Really strong aroma and very fuity as I'd expect with these 2 hops. Color good in glass and back to normal. Bitterness present but not worried about harshness. Promising.
