Notes: Mash low. Add lactic acid into the primary to counter the ph change by dry hopping.
Pitch yeast at 20C and keep it there for a 3 days, bring up to 23C after that for a week. Verdant ferments quickly and after 10-11 days will likely be done.
(If possible do a day at 25C for a diacetyl rest).
Final dry hop drop down to 7c to keep the aroma. There may been a little increase in plato due to hop creep so keep it for 48h before moving to serving vessels. Then remove vegetal matter.
Ascorbic acid when added to mash and then at bottling/canning/kegging will hold off oxidisation. |

Notes: My 2.0 version is way hoppier tasting and smelling thanks to the double dry hop. Well balanced with hops and malts and a nicer aroma and taste. The body is less IPA and more pale ale now.
Lactic Acid added to Primary to counter rise in pH from dry hop. |

Notes: Using the "co-pitching" method as outlined here: homebrewtalk.com/forum/threads/fast-souring-modern-methods.670176
Salt, coriander, lime zest last 10 min of boil.
3 good sized jalapenos (seeds removed) last 10 minute boil, roasted & soaked in vodka overnight before.
Co-pitched yeast with 4 x capsules Swanson's L. plantarum.
3 more jalapenos (seeds removed, unroasted) day 5 fermenter.
The hops is added once beer in fermenter reaches the desired sourness (by taste, I don't have PH meter). This stops any further souring.
This was the best beer I've brewed so far (12 brews). |

Notes: My Notes:
I didnt quite like this one at first (week 2-3), finding it a bit too roasty bitter, but it matured beautifully. The roasty bitterness smoothed out, and it is becoming a beautiful beer(week 5).
Day 100, this beer is absolutely lovely. So silky and easy to drink. It definitely benefits from low carbonation levels.

Notes: 64 - 70 degree fermentation.
ferment for 2 weeks then dry hop for 5 days. transfer to keg. prime to 2.3v c02
This comes out bursting with flavor. Not real bitter on the front , the late addition hops make a very tasty IPA. It never lasts more than a week once its tapped.
I cant remember where I got the base recipe but I now it has won awards. |
