Notes: For Brewzilla 35 liter with continuous recirculation.
Water: 8 gal in kettle, add chemicals, at first strike temp (~110F) drain off 1.75 gal for later sparge. Sparge with 1.75 gal or more to get 6.75 gal pre-boil.
Cool to 64F, add 45 sec of Oxygen or 5 min of air, then slight underpitch to encourage esters at same temperature. Wyeast 3068, alternative While Labs WLP300. Near end of fermentation, increase temperature to 72 F and hold 3 to 5 days. Keg without a cold crash.
Carbonate to 4 vols, fairly fizzy. |

Notes: My first brewing trials were at best uninformed at worst misguided. The advice from my LHBS wasn't enough for a clear explaination until, the suggestion of Dave Lines' books published by AW. With these (the big book of beer & brewing beers like those you buy) in hand the procedure became understandable and process replicable.
This was a while ago in the mid-80's when home brewing information, ingredients, recipes, equipment, and knowledgble dialogue not as simple to find as it can be today. My interest piqued I continued to seek information and put what I learned into practice learning to brew beer. It was a lot of fun to make and enjoy a homebrewed beer. It still is!

Notes: Ferments for about 3 weeks @50°F then do a Diacytl rest for 3 or 4 days @63°F. No additional yeast required for bottling as it will carb up with 4.5oz corn sugar in about 10 days. Store in fridge to lager for a month or so if you can keep out of it. Or keg it and allow the same time for lagering. I've made this 6 times and there is not much difference between using german pils or american pils. This is a very good Pilsner that I constantly brew!
I upped the Perle by a half once and scaled up to 6 gal from the original recipe found on HBT. |
