Notes: Based on "Gose with Everything" from AHA/Zymurgy 2019
Changes of note: Adjusted ABV target to 4.35%, reduced salt, switched to Mosaic (because I have it), Added lime zest, increased boil to 15 min.
Initial wort pH: 5.8
+12g Lactic Acid 88%: 5.0
+ 1 lime juice: 5.0
+ 4g Lactic Acid + 1 Lime Juice: 4.7
Added 16 tablets Swansons L. Plantarum. Ferment 92-96F for 24 hours.
Pre-boil pH 4.3
Boil 15 mins, cool to 88F, move to ferm. chamber, cool to 75F, oxygenate, pitch US-05, cool and ferment at 68F.
Directions from original recipe:
5 gallon batch 50% pils, 50% wheat malt Single Infusion Mash at 154° F for 60 min. Adjusted wort to 4.5 PH with Lactic Acid. Bring wort to 200° F then cool to 95° F and added 8 capsules of Swanson’s L.Plantarum. Purged Kettle with CO2 and covered with Saran Wrap. Keep the wort at 90° F for 24 hrs and got the PH down to 3.2. Bring wort back to a boil and then immediately started cooling. Added 10 g crushed coriander, 14 g pink Himalayan sea salt, and 1 oz galaxy pellets at flameout. Cooled to 70° F and pitched Safale US-05. Kegged after 10 days.

Notes: OG 1.071-1.073 ( was drunk, and temp corrected ). Poured on 100g of citra.
Dropped in 100g Sabro and 50g Citra 36hrs - still krausen, 1.017 gravity.
FG 1.014. That's a nice beer. It's freakin' silky. Those Big O Oats are furious in the creamy department.
Styrian Wolf bitters and flameout, Citra and Sabro make an amazing mix. I really like this beer. I might tune the oats back a little next time?? dunno... I'll try with lactose as well next time ( was too drunk and forgot to add it ).
