Notes: Five litres of strike and four litres of sparge water used is municipal source with high hardness at ~200 ppm (Ca+). Top up water is reverse osmosis processed.
Mashed grains for 90 minutes at 65 C (+/- 2) [150 +/- 5]. Sparge water was also 65 C (+/- 2) [150 +/- 5]. Boil volume was about 9 litres and boiling pot was 32 litres in capacity.
Top up water was chilled to 8 C and added to cooled wort.
Wort was chilled to 8.5 C, before yeast was pitched. Yeast is slow to bloom at this temperature, so patience is a virtue!

Full volume, no sparge
1 mL LA at end of boil.
Hops loose in kettle.
Chill immediately at end of 60 min boil.
Allow to sit covered x 1 hr prior to draining to FV
Ferment at 52F x 7 days, then raise 2-3 F every 1-2 days until 64F or terminal gravity. Once SG has stabilized, cold crash x 7 days adding gelatin on day 4. Biofine 5 mL in the keg. |

- Used 20lb two row malt. Efficiency was 86% instead of planned 76%. ABV 6.8%.
- Dry hop one fermenter with 1oz citra hops. WAY better than non-dry hopped version.

- Reduced two row to 18lb to account for higher efficiency. Will be dry hopping all of the double batch. |
