Repitched rehydrated philly sour yeast at 36 hours after no apparent attenuation or signs of fermentation for the first yeast batch. Very small spots (approximately 1-2mm) of potential infection appeared around open air area above wort. The rehydrated philly sour pitch took off rapidly, showing signs of activity at 5 hours and significant increase in bubbling at 7 hours after pitch. It is worth noting that this philly sour yeast packet expired in a year from now, but the packet was not vacuum sealed right and air and loose space within the packet. Appears to be working fine.
Stirred hard during mash every 15 mins leaving grain bed untouched. Recirculated at 30 mins left in mash with low flow. Cooled rapidly to 80F or below with wort chiller - potentially cooled too far - unsure of how accurate anvil foundry thermostat is.

Notes: Mash in at 145 °F (63 °C) for 30 minutes. Raise to 158 °F (70 °C) for additional 30 minutes. Mash out at 168 °F (76 °C) if possible. Collect 6.5 gallons (24.6 L) of wort and boil for 60 minutes. Add Cluster or Northern Brewer hops at beginning of boil. Add Hallertau at knockout. Cool wort and transfer to fermenter. Aerate and pitch yeast. Ferment at 52 °F (11 °C) for two weeks, then lager just above freezing in secondary for six weeks.

Brewing at low gravities presents many brewing challenges that I’ll likely detail in a future blog post. In a nutshell, good brewing practices are necessity, since any flaw will easily show. Additionally, in the recipe design, use base-malts and speciality-grains that have intense flavors, since low alcohol beers have small grists. For the session amber, I went with some flavorfuls malts I normally use in small percentages: Munich, Crystal 75 L, Aromatic malt, and made it the entire grist. On the yeast side of things, I suggest using a strain that will improve the mouthfeel. I used Wyeast 1450, which is a mouthfeel and caramel enhancing strain with a neutral ester profile. Most English strains are also good, but will usually produce some fruity esters, a must-have for any English-style session ales. |

Notes: Chilled to under 70 and pitched 1L starter. No other issues. Need to adjust grain mill to a finer setting, the efficiency was off. After tasting, it is great but might add more lactose next time. It is nice and creamy now on nitro.
