brewed last night. issues :
* realized the homebrew store gave me 4oz whole hops instead of 2. used all four in the mash
* forgot to add mash hops at beginning of mash. added them at the end for sparge and lauter. total about 20 minutes contact time with that lauter
* warrior addition was supposed to go in for 30 min but i added at the beginning of the boil. i tried to shorten the overall boil to 45 minutes but it ended up being 60 minutes
* origianlly id had both a 20 min and 15 min additions of amarillo. since my boil was messed up and probably over bittered, i combined the two into a 5 min addition. they still had more contact time during chilling, maybe 20 minutes.
* those are all the mess ups i can remember at the moment...smh

gonna rebrew this.
Last batch was a good game day brew, which I did enjoy. But there was a metallic taste to it that I'm starting to blame on all those old BSG hops. At first I thought it might be the evergreen but I used some other variety in an IPA recently and it had a similar taste. Time to toss those.
Redoing this recipe to return the hop sched to cascade in the mash hop, warrior for a little bittering, and amarillo the rest of the way.
Not sure if I should modifying the water more like an IPA, but for now lets just use tap and re-assess later.

originally this was supposed to be cascade, warrior and amarillo but did not have enough amarillo brewday so supplemented half of it with evergreen. im starting to feel that i dont particularly care for evergreen....we shall see..
gravity numbers came out about right i believe.

revamping this for 2023 amber lamps / ale to the commanders.
adding biscuit malt and adjusting grain bill for about 5.8% abv. going with english ale yeast to go along with the biscuit idea. redo-ing the hops, choosing amarillo sort of randomly. hopping more firmly like a sierra nevada pale ale or almost like an ipa.
not sure on water, normally amber ale i would use tap but for more crisp hoppy profile i could make some adjustments....
(side note. despite how bitter and crisp it is, sierra nevada pale ale is only 38 IBU)

rebooting this again. going back to cascade and centennial combo. considering a more ipa water profile to boost bitterness? not sure....
adjusting volumes, efficiencies, etc. adding acid malt for ph.
i like continuing with the english yeast idea
could consider doing a small dry hop, 1-2 ounces. especially if no water profile it will be less sharp so might could use a little more hop boost.

ok well yet again this will not turn out like the original.....brewed this on 10/28. took pre boil gravity at 1.055 but forgot to take OG. based on that i am adjusting the recipe here to get to 1055 pre boil gravity and adjsuting the volumes. also on brew day i was missing cascade so i substituted with tahoma which im predicting to be kind of citrusey? maybe not fitting for amber ale but oh well.
note to self. might have discrepency with water profile versus whats coming from my tap. predicted 5.53 but measured 5.32.
before these changes, on brew day this recipe was sitting at :
pre boil size 7 gal
post boil size (not set)
batch size fermenter 5
efficiency 64%
pre boil SG 1.047
post boil OG 1.065
for a 6.6% abv

resurrecting this old one. keep in mind i brewed it a 2nd time with adjustments (called his shoe broke) but i remember it being subpar. going back to this recipe. will try to do some work on the water profile (for malty? or hoppy?)
everything else looks fine actually. it maybe could use a little more hops but also for amber ale its probably fine like this. there were notes in the other recipe about mashing a little higher. maybe like 152 or 153? needs some research for confirmation. could maybe use rva manchester also since ill be using it for another brew.

Notes: Double Decoction:
*Note: Pilsner Urquell uses a triple decoction method with an initial acid rest, but I use well enough modified malts and correct for pH already so the first of three decoctions is unnecessary. The decoction measurements below are ones I developed for an electric system and err on the side of caution, so they are the lower amounts needed to potentially reach the next temperature step and direct heat can be applied to compensate.*
Perform a protein rest at 125F for 15min, then pull off slightly less than 1/3 (1.16gal/4.4L) of the thickest mash and place it in a separate pot. Bring the pot slowly up to 158F and hold for 15min, then slowly bring it up to a boil and proceed to boil for 10min. Stir often so the grains do not burn, but try to allow some 'browning' to help darken the colour and enhance the flavour/aroma profiles. Add the decoction back to the 125F mash, little by little, aiming for a beta rest temperature of 148F. Hold this temperature for 30min while adding back any leftover decoction (if any) as it cools. After this has finished, pull off roughly 1/6 (0.7gal/2.6L) of the thickest mash a second time and place it in the separate pot. Slowly bring the pot up to a boil and continue to boil for 10min. Add the second decoction back to the mash, little by little, aiming for an alpha rest temperature of 158F. Hold this temperature for 30min while adding back any leftover decoction (if any) as it cools. Once this rest has finished, raise the temperature up to a mash out rest of 167F and hold for 10min. After the decoctions and mash out are finished proceed to sparge/lauter as usual.
No Decoction:
Instead of the labour intensive double decoction mash schedule you could:
- Substitute some of the pilsner malt for vienna and/or munich to add colour and depth.
- Include some melanoidin malt for a slight decoction 'feel'.
- Add some carapils malt (or your preferred alternative) for improved head retention.
- After which, just carry out a temperature/infusion mash schedule based on your preferences.
**This beer won a national silver medal at the Saskatoon Headhunters Competition (2017) and has consistently scored 40's at other national competitions.
***With the regular 3.5%AA Saaz the hop additions are 1.5oz @ 90min, 2oz @ 20min, 1oz @ 10min, 1oz @ 0min. |
