Notes: Sparge to hit pre-boil volume and run off one extra gallon into a second pot or kettle; start a side boil on this pot to transform the wort into a melanoidin-rich malt syrup—without scorching!—and add back to main boil.
Ferment for the first 3 days at 62°F. After 3 days, warm fermenter to 68–70°F for a diacetyl rest.
Prepare two vodka infusions in two Mason jars: one of cassia cinnamon and vodka and another of three scrapped, chopped Madagascar vanilla beans and vodka. Let those jars get happy while the beer ages. Dose your racked beer to taste, about 30 mL each per 5-gallon keg.

Notes: The pumpkin is added three times: in the mash, in the boil, and in the fermenter.
Use canned pumpkin puree (not pumpkin pie mix).
Store at 35-40°F (2-4°C). Serve at 40-42°F (5.5°C)
For the vanilla extract, you can make your own; buying 13 ounces would make this a ridiculously expensive brew. Cut and scrape 4 vanilla beans, and put all of it (including the pods) into a small jar. Add 13 ounces vodka. Let this sit for at least 2 weeks, shaking occasionally. But I just use "Baker's Imitation Vanilla Flavor" from Walmart it around a $1.50 for 8oz
The graham cracker extract is essential; it gives it that "pumpkin pie" flavor. Add is the same amount as the Vanilla. I Add it and the Vanilla in at kegging or bottling bucket to get the most flavor. |

Notes: I chose a Gose for a nice smooth sour that can be drank anytime of the year. The grain i used was a 50/50 blend of pilsner and wheat. this is a very easy and traditional grain bill. I was not looking for anything from the grain to stand out anyways so i wanted it simple. The mash water to grist ratio is pretty high because i dint want a stuck mash with all the wheat. I also added lactic acid to the mash water to lower the pH to 5.4. The hops i used are not very traditional but i wanted the orange flavor from the hops to match well with the coriander and salt. The hops only have 15 IBU we shouldnt get much of aroma or flovor since they are added in the beginning. I am adding corpse ground coriander and salt to the last 10 min of the boil for a traditional gose flavor. I am fermenting with a german ale yeast and souring with a lacto brevis since it is hop resistant. |
