Notes: First bring to a boil all the brew water, add the first juniper branches, let boil for 10min then turn off the heat and let infuse still 30min.
Split water for mash and sparge, let cool and start the brew when mash water is at strike temperature.
Second juniper branches are added at first wort just during lautering to mimic the traditional filtration process.
Traditionally this should be a raw beer but I prefer to do a short boil to be sure.
Stalljen kveik yeast got to final gravity in less than a day and a half! |

Notes: 1. Heat 2.5 Gallons of H2O on high (10) until 140°
2. @140° turn heat down to medium (5) until temp reaches 150°
3. @155° turn heat down to low (2) and steep grain for 30 mins (160° max)
4. Remove grain and discard
5. Remove from heat and add LME/DME stir until combined
6. Return to heat and bring to boil. Add remaining ingredients per recipe. |

pitch 1 packet US-05 at 68 F. Allow temp to rise to 72 F when 2-3 plato from terminal gravity.
when fermentation is complete, soft crash to 60F and add dry hops for 5 days. dry hop amounts is for 6 bbl double batch.
perform diacetyl test and then crash to 35 F. After 2 days, dump trub, add 500 ml biofine and 20 g antiox. Carb to 2.5 vol. Package when clear. |
