Notes: 1. Add DME and water agents to 7 gals water in kettle, stir to dissolve.
2. Heat wort to 155-160 degrees.
3. Steep caramel/crystal, honey, Abbey, Special B, and roasted barley malts for 30 minutes then remove from kettle.
4. Bring wort to boil, add 1 oz East Kent Golding hops.
5. After 30 minutes boil, add maltodextrin.
6. After 50 minutes boil, add yeast nutrients and remainder of hops.
7. After 55 minutes boil, add Whirlfloc.
8. After 60 minutes boil, turn off heat, top-up to 6.5 gals with distilled water, whirlpool & rest for 15 minutes, cool, transfer to fermentor, aerate, pitch yeast.

Notes: Literally just looking to make an easy, cheap, and light beer.
2 gallons of tap water warmed up.
15 minute Oat steep @ ~172°F.
Added DME after removed the bag of oats (this got the volume back up to 2 gallons -- with some water added).
Had a slight boil over after adding the Saaz, sadly. Wasn't much thankfully.
OG ended up being a 1.032 at a temperature of 75.4°.
FG ended up being a 1.004 at a temperature of 73.9°.
Added a half teaspoon mixed with one cup hot water (~170°F) to the keg. |

Notes: Witty Berry Braggot is a sweet, dry, earthy, almost cheesy brew. More drinkable than mead, dryer than ale, strong as a wine.
It is great as a not-so-sweet dessert wine to enjoy with a piece of cheesecake or chocolate, a nice smooth tumbler on the rocks to sip and relax with, or mixed with juice and seltzer for a light party drink.
The dryness of the wheat, mildness of the barley, and tartness of the cranberry all come together to balance the mead must well, making this one of the most drinkable varieties of mead I've ever had. |
