Steeped the two varieties of grains and the roasted barley (4.2oz of each) for 30 minutes
Flame out part way through - no thermometer so i turned the flame on and off so as not to scorch

Set timer for 30min
About 7.5min to go – added 1oz East Kent Golding 5.6 AA
In a side pot – transferred some wort and dissolved 1lb DME and 0.5 lb sugar.
At end of timer, flame off and transferred side pot to main pot, removed hops, began cold crash.
I added two packs of dry Safale US-05 right into the fermenter - no rehydration.
The wort (pre-yeast) tasted amazing. Pretty sweet but thats to be expected at this point in the process. Has a good strong coffee taste to it.
Tuesday 9/26/2017 - Didn't notice much of any fermentation happening so I took a gravity reading and to my surprise, it was down to a little over 1.030 from a start of 1.090! It still tasted pretty sweet and I feel like the coffee taste has diminished somewhat.
There seemed to be stuff collecting at the bottom - not sure if it was dead yeast or what but I decided to stir things up a bit - literally. Then I re-hydrated about half a packet of Safale US-05 and poured that into the fermenter. Let's see what happens.

In this extract recipe, the oats are not going to provide any sugars for fermentation so the amount of malt extract is greater than the other recipes. Place the oats loosely in a grain bag. Since the oats will swell, avoid packing them too tightly in the bag. Use more bags if needed. Steep the bag in 2 gallons (~8 L) of 170 °F (77 °C) water for about 30 minutes. Lift the grain bag out of the steeping liquid and rinse with warm water. Allow the bags to drip into the kettle for a few minutes while you add the malt extract. Since this is only oats, squeeze the bags to extract the liquid. Add enough water to the steeping liquor and malt extract to make a pre-boil volume of 5.9 gallons (22 L) and a gravity of 1.043 (10.6 °P). Stir thoroughly to help dissolve the extract and bring to a boil.
Once the wort is boiling, add the bittering hops. The total wort boil time is one hour after adding the bittering hops. Chill the wort rapidly to 68 °F (20 °C), pitch the yeast and aerate thoroughly. Follow the fermentation and packaging instructions for the all-grain version.
Begin fermentation at 68 °F (20 °C) slowly raising temperature to 72 °F (22 °C) by the last one-third of fermentation.

Notes: Use pure unsweetened cranberry juice (such as Knudsen or Lakewood), not the stuff you drink for breakfast. Add at flameout to retain the flavor.
I racked to the secondary after 10 days, then waited a week before bottling.
Looks and tastes true to the style, except it has just a hint of cranberry. Opened at a Christmas gathering and it was far more popular than any of the commercial beers offered! |
