I got box of six Muntons Barley Wine 1.5kg kits for really cheap so I'm going to see what I can do with them. Since they were so cheap I figure I can experiment with them.
Don't let the OG stated on the can fool you. The stated OG is after you add 40% sugar so the cans don't have as much sugar as it sounds. I calculated about 26.6 PPG but I'm probably wrong.
They come pre hopped to about 30 IBU/1.5kg/13l but the hops are a mystery. I've added six kits so I guess the IBU is 90 but who knows if it works that way.

I don't want to tie up my main fermentor because it might take a while to ferment and age so I'm using 25l container. I haven't made a batch this big before so not sure if I'll scale it right.
I also chucked in a packet of S-04 yeast because I thought the OG was going to be crazy when I stuffed up the PPG calculation and I was worried that the 1028 couldn't have done it on its own and s-04 is a similar(ish) yeast. If you make this recipe and only put two cans in originally, one 1028 pack would be fine I reckon.

Notes: This is a variation of Sneezy Rat. Many thanks to its creator (which I cannot find).
I tried making "Sneezy" a few times without getting the bitterness I expected. But, this current recipe seems to work really well.
I also added 200 grams (7.0 ounces) of Dextrose to the primary after boil. And, 6.1 ounces of Dextrose in the bottling pale and extended the dry hoping time to 9 days.

Notes: recipe calls for 6.5 lb DME and .75 lbs dextrose to get OG of 1.072, go down to FG of 1.011 for 8.2%abv. Called for 8 gallon bol to get 6 gallons in fermenter to get 5 gallons after hop loss bottled.
Steep grains at 165F for 30 mins in 1 gallon water, remove and rinse with hot water. Bring up to full boil volume and stir in dextrose then bring to boil.
Pitch 2 packs of yeast. Ferment at 67F, once activity slows, add first round of dry hops then after 7-9 more days, do second round. leave 5 more days then bottle. |

Notes: Delicious double IPA with a strong aroma. Based on Pliny the Elder by Russian River Brewing with hop profile modifications inspired by Hop Diggity by Mother Earth Brewing.
Notes:
- Add LME at end of boil (T-15 minutes). Adds about 0.5 gallons of volume.
- Best results if hops are added loose without muslin bags but may require extra time in secondary to settle out. Clogged my keg beer tube the first time I brewed this!
- Use White Labs WLP001 California Ale Yeast or Wyeast 1056 American Ale Yeast
