Notes: Though it may not seem it from the IBU, this is the hoppiest beer I have ever come upon; makes Dark Horse's appear mild. It's actually an acquired taste, and definitely a niche-beer. Its very citrusy and refreshing, but also has a grassy, piney flavor. Nevertheless, it's one of my favorites, and its very easy to brew. Color should be somewhat cloudy at first almost like a WitBier, but should settle after bottling. |

Notes: Ferment at 57degF. Maybe allow a rise to 65degF for2 days after fermentation complete as a Diacetyl rest. Then drop temps to around 35-40degF for a couple of weeks for clarity. |

Notes: Kit recipe called for 2 lb of DME — I only used 1 lb. I also increased the batch size to 6 gallons to hit desired (lower) ABV.
Yeast starter — Initially thought I was going to brew this in mid-February, so I made this 500ml starter on 2/8/19. Realized on 2/10/19 that I would not be brewing that weekend, so I put it in the fridge. Pulled it back out on 3/26 and pitched it into another 500ml of starter wort. Cold crashed morning of 3/2/19. Decanted morning of 3/3/19 and allowed to sit at room temp for several hours before pitching into 6 gallons of wort.
Secondary fermentation — 3 gallons will stay in 6 gallon fermenter. 1.5 gallons will go into 3 gallon carboy with (INSERT AMOUNT) boiled kumquat puree. 1.5 gallons will go into 3 gallon carboy with (INSERT AMOUNT) boiled kumquat puree and (INSERT AMOUNT) szechuan peppercorns. |

Notes: -Take 2 15oz cans of pumpkin and mash in with 2 lbs Rahr 6-row malt and 3 gallons of water at 152 degrees for 1 hour.
-Strain the liquid and add to boil to achieve 3 gallons for boil.
-Steep Caramel 40 in grain bag in 2.5 gallons of water for 20 minutes until water reaches 170 degrees. discard grain bag
- Bring to boil and remove from burner, stir in 3.15 lbs amber malt syrup and 1 lb Pilsen DME.
-Bring to boil add 1oz cluster hops and light brown sugar(60)
-Add 3.15 lbs amber malt (15 min)
-Add 1 tsp pumpkin pie spice and 3 cinnamon sticks (0 min).
-Cool the wort to 100 degrees
-Fill primary with 2 gallons of cold water and add wort. Aerate and pitch yeast at 78 degrees.
-Transfer to secondary add 1tsp pumpkin pie spice.
-After 2 weeks add 1 tsp graham cracker extract before kegging or bottling. |

Notes: Steeped grains in nylon bag @ 165°f for 00:35. At 0:00, removed from heat and DME was added. Then back on the heat and brought to a rolling boil. At 1:00, added first hop addition. Premixed both second hop additions together prior. At 00:30, added hop additions evenly every 5 minutes, with the last addition at flame out. Immersion chilled to 80°f and then racked to 3 gallon glass carboy fermenter. Pitched the rehydrated yeast and topped with the airlock. Should be just the right amount of head space in the carboy with the amount of water loss during the boil. (About just shy of 2.5 gal) |
