Notes: I added the steeping grains to a bag and let the water come up to 155 F at which I flamed out for 20 min and let the grains steep.
On the side I brought 1 gallon to 155 F and after the bag drained of almost all liquid I placed the grain bag in the separate pot and flamed out at 155 F. This steeped for 10 minutes.
Also, I used hot water to get all the LME from the containers, as I wanted all the ferment-able sugars I could get.
This resulted in me over shooting my planned OG of 1.060 to 1.068.
I make a starter, but not sure if it will be enough for 1.075, but I shook the hell out of the fermenter. |

Notes: M-12 Belgian Quad is an amazingly complex treat. Its deep ruby-mahogany hue is the canvas for flavors of raisins, caramel sweetness, and tart dark fruits, as its smooth and luscious body fades into a lingering finish. M-12 is cloaked with a silky, lacy and firm off white head exuding a montage of toffee, honey, caramel, and phenolic aromas. |

Notes: Adding 3 oz citra & 3 oz mosaic immediately after 60 minute boil during cool down.
Made an 800 ml starter - 24 hours, cold crash for 3 hours, will decant and pour off top.
Added 2 gallons cold water, and immersion chiller. Will top off fermenter to close to 5 gallons to hit OG target.
OG was spot on - 1.070
Fermentation kicked in after about 6 hours |
