Notes: One gallon of treetop juice, add the turbinado and hops. Shake like crazy till its all dissolved. Pitch the yeast, stop it up with airlock wat ten days, then secondary for three weeks. Bottle and condition for three weeks. Enjoy! |

Notes: This one has been good all summer, VERY carbonated now (Sept), and it's absolutely delicious. Another favourite among my friends, not overly hoppy (which is fine for both the style and the season).

Notes: I use Cider House Select Cider Yeast for this. I pitch it with 2 cups of the mash after the mash is done and cool to the 73 degree.
Boil the gallon of apple cider and the hops for 15 min (only add half of the bag of hops should be .5 oz. add 2nd half at the 1st rack as a dry hop leave for 30 min then pull from cider.)
when the 15 min is up turn the heat off and add the 2 pounds of honey (I use Dutch gold Eucalyptus Blossoms) to the boiling cider. Remove 2 cups of the liquid and let cool to 72 to 76 degree. ( I use a magnate stir for my yeast started and it also helps cool the liquid faster.)
This will not fit in a 1 gallon carboy I use a 2 gallon buckets for this.
I have also done it where I remove the amount of cider to honey where it would fit the one gallon carboy but the abv comes out to about 13% that way and it taste more like a desert wine. |

Notes: Pumpkin 5 lb (shallow baking pan with little water @325 x 1hr or @300 x 2hr)
either steep with grains @ 150-155 degrees for 1 hr & sparge
* or add to boil for more flavor & body
If adding pumpkin to boil, steep grains for only 30 min @ 150-155.
Spring water 3.5 gal initial boil. Sanitize fermenter/carboy with Saniclean. Save sanitizer for hydrometer, spatula, & air lock.
Steep grains for 30 min at 155-160F (158).
Add bittering hops (not in bag), bring to boil, & boil for 30 min.
After 30 min boil, add pumpkin (not in bag), flavoring hops (not in bag), & boil 30 min.
With 10 min left in boil, add irish moss & yeast nutrient (if using).
With 5 min left, add spices & strainer (to sanitize).
End of boil add vanilla.
Cool wort with ice (3 10lb bags) in garden tub stirring ice 1 way & wort counter. Add frozen spring water (1 gal in 2 small amounts from 2 plastic containers that were sanitized prior to water being added). After cooling to 60F, aerate well then pour into fermenter through sanitized strainer & QS to 5 gal with refrigerated / room temp spring water dropping temp to 65F.
Check OG with SANITIZED hydrometer & pitch yeast. Dry yeast should be suspended in 100ml of water @ ~85F for 15 min.
Leave in garden tub with water in closet at 66F (or minimal recommended fermentation temp), after 48 hr active fermentation with temp @ 66F, slowly let temp increase to 72F max (or max 3 degrees less than recommended fermentation temp). After 10-14 days, transfer to 2nd fermenter or keg. Have blow out tube ready @36 hr. Total fermentation/lager time 4 weeks.

-Add the 4 gallons of pasteurized apple cider or juice and 2 containers of the guava nectar to a sanitized carboy.
Pitch the yeast according to the instructions on the packet.
Ferment for approximately 21 days. Fermentation will be rapid for a few days and then slow for a couple of weeks. Ferment completely dry.
-Once fermentation has stopped and you have taken a gravity reading to make sure it’s done, you’re ready to keg the cider (if you don’t keg, jump down a few paragraphs to the bottling instructions).
-Rack from carboy into cleaned/sanitized keg.
-Add 1/4 tsp to 1/2 tsp of Potassium Metabisilfite to the keg. Purge the headspace from the keg with Co2 and cold crash.
-Wait 24 hours.
-After 24 hours, add 2.5 tsp of Potassium Sorbate. You need to wait the 24 hours so that you have some sulfite in the cider before you add the sorbates or you will end up with some off flavors. Purge the headspace in the keg a couple of times with Co2 and cold crash.
-Wait 3 days.
-After 3 days, backsweeten with 1-2 containers of thawed frozen apple juice concentrate (to taste) and 2 containers of the Goya Guava Nectar.
-Seal and purge the airspace in the keg, then put it under pressure to begin carbonation. I just carbonated it slowly at about 10-12 psi, which worked perfectly for it.
-It’s drinkable pretty much immediately, but if you can wait 3-4 weeks it will improve substantially in flavor. You may have sediment settle at the bottom of your keg. If you find the first pint is a slushy ugly pink mess, pull another pint or two before worrying too much – I had to pull about 20 oz before it got to the good stuff.
