Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gal recipe you will need extra because of the fluid loss during the boil process
.5lb Caramel 10L Grain
.5lbs Vienne 20L
1lb Rahr 2 Row Grain
.5lbs Carapils Grain
.5lbs Carahell Grain
6bs Golden LME
3oz Simcoe Hops
2oz Chinook Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME, and return wort to boil
Add 1oz Simcoe hops and boil for 60 minutes
Add 1oz Simcoe and Chinook hops and boil for 10 minutes
Add 1oz Simcoe and Chinook hops and boil for 2 minutes
Remove pot and enough bottled water to bring the specific gravity to 1.058
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 4 - 5 days
Reduce CO2 to 5 - 7psi, pour and enjoy

Notes: Make yease starter using some of the DME. Boil LME with Loral hops + 1 Tblspoon crushed coriander (use rolling pin) in 4 gallons of water - will boil down. Add I Moss + servomyeces tablet for last 10' of boil
During the last 10 -15 minutes of the boil heat 1/2 gallon or so of chlorinated water (spring water etc) to 100 deg F. Add honey to that water and mix/ dissolve honey into warm water. This prevents the honey from being exposed to higher temperatures to boil off aromatics. My honey is from my backyard hives and some had started to crystalize. Do not worry that the honey has not been sterilized (I have done this approach several times)
I used a refractometer and got an original S.G. of 1.105 . Did not take an final O.G. as I am saving this after brew day before bottling day
Cool wort to 100 deg w/ wort chiller. Add honey and water and top off to 5 gallons. Use wort chiller to cool to desired initial fermentation temperature
Place 1 Tblspoon of crushed coriander + fresh ground nutmeg into sterilyzed primary. Add cooled wort w/ mixed in honey. Add yeast starter. Ferment and rack after initial fermentation. As fermentation slows add dry hops 3 days or so before bottling (no need to go longer) keg or bottle w/ added corn sugar or malt as you prefer.

Notes: Poner 5 galones de agua a hervir. Puedes añadir la mitad de los extractos desde que el agua está a temperatura ambiente. La otra mitad de los extractos junto con la dextrosa se añaden faltando 15 minutos para terminar de hervir, de esta manera hay menos caramelización y queda más claro el wort. Fermentar por 5 días a 68 y al sexto día subir la temperatura a 72 grados. Dejar fermentar por dos semanas completas, los últimos 4 días de fermentación subir la temperatura a 75.
Embotellar con 6 oz de priming sugar o poner en keg. |
