- next: Weyermann Pils + 20% munich
- 5g/L saaz was delicious, but 2022-10 going with a higher IBU and "less is more" 3g/L. Also adjusted efficiency to 75% from 80.
- no version of this has been too bitter. ignore the 45 IBU limit and go bigger
- 30% munich is too much. tastes like a more bitter Vienna lager. Not a bad thing, but not what we're after here. keep munich at or below 20%.
- 2023-5: pils + 5% caramunich (c40) seems to be the way to go here for body and color. massive dump of Saaz (5g/L) late hops and something high alpha for bitterness like Magnum or Herk. No water additions; Arvada Soft. Changed recipe to floor-malted but I usually go with standard weyermann pils because that's what I have.
- 2023-8: 50 IBU of herkules was good but could go higher. Probably try 55 next time and see what happens.
- 2024-1: dialing this back for a traditional Czech "draft" beer:
výčepní – a "draught" beer, though it can be bottled, brewed between 8° and 10°
- 2024-6: added munich, increased FWH to 44 IBU |

Total Mash vol = 11 gallons @ 154 degrees F for 60 minutes, strike temp = 160 degrees F
Going to do a split batch of 5 gallons with W-34/70 and 3 gallons with S-23 that was harvested from Pre Pro Mexico lager. Both are fermentis dry yeast.
SG = 9.5 gallons @ 1.048 g/L (hydrometer method).
FG = 8 gallons @ 1.055 g/L (hydrometer).
The dark munich malt I used must have been darker than 10 degrees lovibond because the color is closer in color to an Octoberfest Marzen. I would suspect the malt was dark munich from briess which is 30 lovibond.
On Sunday 8-29-21 the W34-70 beer was 1.021 g/l and the S-23 was 1.019 g/l. Thermostat said 59 degrees F, but thermo pen said 61 degrees F
Both beers kegged on 9/9/10. 34/70 beer FG = 7.2 Brix = 1.013 g/l after correction. S-23 beer was 1.014 g/L. |

Notes: I have used a little known Australian hop bred by Hop Products Australia. The hop is Helga also known as Southern Hallatau. Although the hop never gained popularity, it was said by those who used it to be an excellent continental larger hop. HPA has just ceased production of the hop. I thought I would give it a go. It’s aroma in the foil bag was excellent. I am excited to seen what it produces in the beer.
I used Atlas malted grain from Voyager, a Australian boutique malt producer.It produced a very very clean wort with an excellent malt aroma. I will definitely use this grain again. Much better than Joe White.

Notes: Efficiency was really low, after 60 min mash OG was ~1.034. To increase the OG I increased the boil to 90 min, this brought the OG up to 1.050, but lost a decent amount of volume. Only had about 2.5-3 gallon that went in to the fermenter. Found out later the reason for the low OG was because the thermometer was not reading accurately and was off by a good amount and as a result the mash temp was much lower than it should have been.
The wort was chilled using the new wort chiller that was hooked up to a submersion pump, it cooled the wort to around 70 degress in about 15-20 min. Was very effective! After cooling to ~70 degrees the wort was transferred to the primary bucket and taken home (brew day was at defalcos for national homebrew day). The wort was chilled further in an ice bath for about 2.5 hours and the wort got to around 40 degrees. The yeast was pitched at this point.
Pitched 2 smack packs of 1007 (wyeast) that were activated (smacked) the day before brewday so the yeast had ~18 hours to revive before being pitched.
To "lager" this beer the primary fermenter was kept in a water bath with a frozen 4L bottle to keep the temp around 60 degrees which is the temp I want this yeast to ferment at.
Took about 24 hours before seeing any signs of fermentation (aka bubbles). Likely due to lower fermentation, the yeast may have been stressed and/or had longer lag time because they were pitched into low temp wort.
