Also skipping the "vorlauf" -- sounds like a real all-grain technique. Skipping whirlfloc and kettle defoamer. Pitch at 95F, keep warm. Top-crop the yeast at 40h out of the carboy, using a turkey baster. Planning for 1-2 wk cold crash under the back porch. ------ I didn't end up cold-crashing it. But it turned out delicious, and as the weeks went on, it clarified really nicely. Looking forward to making this again, same recipe.
