Notes: I used fresh spices and coarsely ground them. The total weight was around 20 grams, or about 0.7 ounces.
At high krausen (about 2 days), mix honey with up to 32oz of water. Adjust the amount of water to get the gravity to match the OG. Whisk together and bake at 180F for 90 minutes to pasteurize the honey. Add the honey/water mixture to the wort.
During bottling or kegging, add the Apple Extract and gently stir. Be VERY careful to add until you can BARELY taste it. Adjust the actual amount to suit your taste. I used the entire 4 ounces and it had just a hint of apple. |

Notes: Bought this "kit" from austinhomebrew.com. It came with little instructions except a crubmled up sticker that was hard to read so I am transferring the contents and the "recipe" for my future use. Brewing today. Will report 4 weeks from now on how it comes out and how close it is.
Note -- unsure what hops is used at the 60 minute mark. Was sent 2 small packets less than 1 oz each that say "3HBU pack AA 8.5%"...who knows what it is..... |

НАСОКИ:
Ако Ph е извън границите (5,2 - 5,5) добавям:
-Ако е над 5,5 - Калциев Сулфат (CaSO4*2 H2O) a.k.a. Гипс - 1грам на 1галон вода добавя: 61.5 ppm Ca+2 и 147.4 ppm SO4-2 Добавя свежест за хмела. Сваля pH.
-Ако е под 5,2 - Натриев Бикарбонат (NaHCO3) a.k.a. Сода за хляб - 1грам на 1галон вода добавя: 75 ppm Na+1 и 191 ppm HCO3- Сода за хляб. Покачва pH. |

Cooled to approx 40c and added add lactic acid 88% 20ml
Pitch 6 capsules of probiotic and soured for approx 20 hours.
