Notes: Place apple juice in refrigerator over night. Mash grains, sparge and squeeze to obtain 2 gallons of wort, follow hop schedule and at the end of the boil, add 64 oz fresh grapefruit. Add apple juice to fermenter, then add wort to it. Aerate and Pitch yeast. Dry hop once the fermentation has nearly subsided. |

Notes: This is a no-boil neutral sour base.
Kettle souring is done with US-05 room temp + Goodbelly + L. Plantarum capsule, held at 85-87F for a few days after primary fermentation is completed. Sample often to desired souring (timing is inconsistent in my experience, but works out in the end)

The purpose of this recipe is to be easy. I can brew this on a stovetop setup after work in just over 2.5hrs start to finish. Perfect for work nights. |

Notes: Mash at 148 F for 1 hour, 20.5 qts. water.
Add 14 qts. boiling water for mash out at 168 F over 20 minutes and hold 10 minutes at 168 F.
Yeast starter, 3L.
Hop whirlpool at flame-out for 5 minutes.
Ferment at 50 - 55 F.
Dry Hop after 60 % attenuation.
Diacetyl rest at 75 % attenuation, 60 F for 2 days or until no change in specific gravity for 2 days.
Cool to 38 F over 2 days, rest additional 2 days, then closed transfer to keg, lager for 30 days at 35 F. |

Pale with lager characteristics, crisp, easy-drinking, balanced flavor. Light hop bitterness, and a clean, dry finish. Hint of fruity yeast character.
