Have Krispy on hand. Wish I had Krispy 2.0 or Lutra.
Krispy @ 68ºF was good. I think Lutra would be as well. Going with semi-cold (60ºF) fermented 34/70 on second batch. Also fixed "leaf/whole" to pellet for initial bittering addition.
Went sulfate heavy (light and hoppy BFriend profile) and it was really drinkable, but almost too "drying" on the palate in the finish. Going to try a balanced profile as I want a little of that rather than shift straight to a chloride heavy profile.
Balanced profile seemed better than sulfate heavy so sticking with that. Still quaffable, but less drying on the palate. Reducing the grain to 11 from 12 lbs to reduce the strength a bit. Want to be able to have a couple. |

Notes: - First dry hop charge at high krauzen (three days from day 1 to day 4).
- Second dry hop charge near the end of fermentation, but while fermentation is still active (7 days from day 7 to day 14).
S-04 is good, but if you can get VOSS Kveik, it is highly recommend.
If you do use the VOSS, ferment around 28-29C. You will dry hop 24 hours after pitch, and again 48 hours after pitch, VOSS works super fast.
It is suggested to reverse Chloride to Sulfate ratio, chlorides around 100, and sulfates around 50 will add to the haze you are looking for in a NEIPA. |

Gyle collected from the dregs at the end using a sieve. Usually there is about 1.5 liters left over after auto siphoning wort into carboy. Collect this and cold crash again to get only the wort. Freeze until bottling day.
Use blow off tube or separate into two 22 liter carboys. This Yeast is pretty ferocious. |

Notes: Added 1lbs of dried malt extract in boil to adjust gravity. Also added 1oz Roasted, 2oz carafa III, and blackprinz at 15 minutes end of mash to adjust color.
Beer came out perfect beautiful aroma roasty, with hints of chocolate notes complex. Black beauty with tan head tight bubbles. Flavor is smooth with complex roasted notes (not burnt).
Sweetness starts and finishes the beer not cloying. |
