Notes: Recipe from pork chop on Northern Brewer. Mash and Sparge as usual. Boil for 5 minutes. Chill to 110f. Add food-grade lactic acid if available to get 4.4-4.7 pH, (5mL). Add entire carton of Goodbelly. Seal kettle and leave at 110f for 1-3 days, depending on desires tartness. Taste test- sweet and tart like lemonade. Check pH, 3.2-3.5. Boil for 60 minutes to eliminate DMS. Chill to ale pitch temp and add 3 packets of US-05. fermentation 10-14 days. Add minimum 15g sea salt per 5 gallons. 15g coriander at flameout if wanted. Recipe called for 2 packets of yeast for 5.5 gallons. |

Notes: Harvested dregs from four (4) Tree House can and made a 1L starter. Separated starter into three (3) boiled/cooled mason jars. Topped off with boiled/cooled water.
Used one mason jar and created a 2L starter. Separated the starter into four (4) mason jars (300 ml each), and saved 800 ml for this batch of beer.
Attenuation = 75%
Whirlpool & dry hop only
Whirlpool @ 125F for 20 minutes
Added plenty of nutrient (did not add pure O2). Cool wort to 66 degrees.
Timeline:
12/26 = 1.061 (brew day, 64F starting ferm temp)
12/29 = 1.016 (raise to 68F, dry hop)
01/03 = 1.010 (cold crash)

Notes: Brewed 2/10/14. Blocked the false bottom on accident in the mash tun due to float so I had to transfer it to the kettle and then back to the tun. Topped off with 3/4 of a gallon of water to hit 151F. pH was 5.2 (estimated at 5.4). Hit 85% kettle efficiency. Efficiency was a it lower than usual might have been from sparging too fast. Runoff was also quite cloudy so not sure if that had something to do with it. False bottom got clogged a couple times when draining into the carboy. Possibly too much pellet hops and hot/cold break. Temp on day one of fermentation is about 64F. 2/12/14 temp has been between 65-67F. Added 3/4 of a pound of corn sugar in about a cup of water to boost up the OG. 2/13/14 temps were about 68/69F. 2/14/14 took out of the swamp bath and brew is sitting at about 71F. Dry hopped on 2/24/14 when all signs of fermentation were done. 3/5/14 biofined with 2 tbls. Cold crashed 3/7/14. Racked to keg 3/9/14. Pretty tasty IPA that has a bit of that catty thing going on. Wondering if I repeat this if I should switch all citra additions to 0min. Took 2nd place in the category in the Bridging the Gap competition. |

Maturar apenas 21 dias, mas deixarei as garrafas guardadas até o evento. Minha geladeira consigo colocar até -2°C, nesta cerveja quero maturar oscilando entre -1°C a +1°C.
Nesta receita, vou usar 6,5gr por litro. Ou seja, 130gr para 20l. Como posso não ter exatamente 20l, posso ter uns 19l no tanque, essa medida (130gr) daria cerca de 6,8/6,9gr por litro. |

Notes: Enhanced Double Decoction Mash Schedule
1st infusion 28.5qt(7.125gal) @ 99 deg F. Target Temp 97 deg F.
Rest 20 minutes (Acid Rest)
1st decoction. Pull 16.3qt (4.gal) using a strainer to get as much of the grain as possible, then fill out with the liquid.
Bring decoction to 158 deg F.
Rest decoction for 20 min
Bring decoction to boil, Boil for 30 minutes
Return enough of the decoction to mash tun to bring it up to 133 deg F.
Rest main mash for 15 minutes (Protein Rest)
Transfer remainder of the decoction to the main mash to bring it up to 153 deg F. Have Boiling water at the ready in case it is needed.
Rest Main mash for 45 minutes. (Saccrification Rest)
2nd decoction. Pull 9.64 qt (2.41gal) of mostly liquid.
Bring decoction to a boil.
Boil for 10 min
Return to main mash to bring to 170 deg F
Rest for 10 min.
Recirculate
Collect wort and Sparge to collect 7 gal. |

Notes: arget recipe: my base recipe started with Jamil Zainasheff’s recipe in Brewing Classic Styles, then I added my own flourishes like honey malt, Victory, Toasted Oats, Golden Naked Oats, and graham crackers all to add toasty breadiness and honey graham cracker flavors.
Target Original Gravity: I shoot for 1.065 but as you can see in the recipe I came in a bit high
Hops & target BU:GU ratio: 0.43 ratio which translates to roughly 28-29 IBUs for 1.065 gravity. Jamil uses nothing but EK Goldings and that works for me! I get most of my IBUs from the 60-minute addition but then I add a 5 or 10 minute addition as well.
Bake your oats. Around 300 degrees for 15-20 minutes until they darken a bit and smell nice and toasty.
Also add oats to boil: before the wort comes to a boil like around 180F, I add 4 more ounces of oats to the hop spider and leave them in there until the wort has been boiling for 5 minutes, then I remove them and run through a strainer or sieve and basically ring out all of the slimy oat protein which I then add back to the boil and discard the oats.
Low Fat Graham Crackers: 1 box per 5-gallon batch--two sleeves in the mash, one sleeve in the boil added at the same time as the last can of pumpkin about 15-20 minutes left in the boil
Bake your pumpkin. I spread on a baking sheet and sprinkle with brown sugar and pumpkin pie spice. Bake until you can see some browning.
Pumpkin: Approximately 5 pounds of pumpkin. It’s strange, small cans are 15 ounces and large ones are 30 ounces, why not just make it an even 1 or 2 pound can??
When to add the pumpkin: I use 4 small cans in the mash and THIS IS KEY--make sure that you include the volume of the pumpkin in the valume of the mash water and not in the grist weight, I stir the pumpkin in with the strike water. I also add 1 small can in a steeping bag in the boil, added at the same time as the graham crackers, last 15-20 minutes of the boil.
MASH OUT! I cannot stress this enough to do a 2-rest mash, dough in at a low water/grist ratio of like 1.20 quarts per pound so the saccharification rest will be a relatively thick mash, but add an infusion of hot water to bring the mash up to 168-170 degrees and significantly thin the mash, which will help with lautering.
Spices: either use your favorite pumpkin pie spice or make your own based on personal preference. I use this: Pumpkin Pie Spice II allrecipes.com (I split the cloves with Allspice)
Spice quantity:
Pumpkin pie spice: 1 tsp at knockout/whirlpool and then ¼ - ½ tsp or to taste post-fermentation.
Vanilla: 1 tablespoon good quality vanilla extract.
Sugar! Add about ¾ pound of sugars in the last 5-10 minutes of the boil using a combination of mainly brown sugar and then some molasses and raw demerara sugar (if you have on hand), this is really just to drive gravity a bit and add some complementary fall flavors.

Add the FWH hops during runoff to allow hops to steep in hot wort as the mash is sparged.

Follow whirlpool hops schedule. Turn off whirlpool for last hops addition (the 20 min addition)
Pitch yeast and ferment at 67F for 3 days then raise temp 2 degrees each day until you reach 73F.
Pack at 2.6 vols
IBU's Target = 80
Pours hazy dark orange with creamy head. Juicy hop aroma, big citrus and tropical fruit. Flavor is lots of orange and tropical fruit with bready malt backbone and some piney resiny bitterness in the finish. Mouthfeel medium bodied with smooth carbonation. Serve in glass. |
