Notes: 1.074 original gravity! whole hops clogged my system so had to strain into fermenter -- hop bags a must next time I whole hop. 1272 takes off and is bubbling ferociously at 75° F within three hours of pitching.
Rack to secondary 10 days in - gravity at 1.024 - bottled - nice balance - want more hops next time. Nice beer!

consider when remaking this recipe if the malt profile isn't right to do a decoction mash and try using pilsner malt instead with a 90 minute boil
maybe consider playing with water chemistry if profile still isn't right with decoction
"Traditionally, the mash regimen called a triple decoction required three decoctions and four temperature rests: an acid rest at 95° F, a protein rest at 121° to 131° F, a starch conversion at 150° to 158° F, and a mash-out rest at 165° to 168° F. Today the less time-
consuming double- and single-decoction methods are more common.
The double decoction usually starts with a temperature of 128° to 131° F that is increased to 152° to 155° F and finally 165° to 168° F by two decoctions. The single decoction requires only one decoction to raise the mash temperature either from the starting point, 128° to 131° F, to a mash-out at 152° to 155° F or from 152° to 155° F to mash-out at 165° to 168° F."

Notes: I do a hochkurz style decoction, which starts a little higher. Saves some time. Strong has some good thoughts on decoctions as well in Brewing Better Beer.
Or if you like, a multi rest will suffice (131, 145, 158, 170). To help emulate a decoction, you can also pull a gallon of your first runnings and boil it down to a quart. It will get thick and bubbly, like wort lava. fun stuff. add back to kettle at flame out, or whenever it finishes boiling down.
I prefer to do a no sparge method to help accentuate maltiness. A great advantage to this is I don't really worry about kettle volume. I do measure it at the start of the boil, just to know how to alter my hop amounts. Then I just top off in the fermenter to 5.75 gallons (sort of like an extract brewer would). |

Notes: I've been waiting a long time to brew this one. Too many silly distractions, like work.
Substituted Weyermann Special W for Special B since the Fermentables drop down menu does not list Special W.
My first venture in to liquid yeast. Made a yeast starter with Wyeast 1318 London Ale III. Decanted and performed 2nd step to bump the cell count to over 600 B. Cooled for floculation and decanted before pitching into 12 gallon fermenter.
After primary, split batch in to two 5 gal glass carboys and added Oak Cubes, Cocoa Nibs and Vanilla Beans, all soaked for 5 days in J.P. Wiser's Dark Ale Style Hopped Whiskey. An ounce each of EKG dry hops, for good measure, and let age for 14 days or more.
