I have been drinking these both since 5-26-2014
the one with the no chill is a bit hoppyer and the chilled one you can taste more corn flavor
but both are clear as glass

Notes: Toasted Coconut:
Spread 1 lb of unsweetened coconut on to a large baking sheet and bake for 5-10 minutes at 325 degrees turning the coconut a few time. Sanitize with vodka for at least 15 minutes before adding to primary or secondary. I use vanilla vodka for this recipe. |

Notes: Fermentation:
Start fermentation at 20C for 2 days. Raise temp to 25C. Primary 1 week, secondary 1 week. Made a robust starter with DME. This yeast is low flocculating in the starter, but a beast in the wort. There was a good inch of trub and a very thick krausen that acted like meringue. Definitely collected a generous sample for reuse. Force carbed at 20 psi over 2 weeks.
Tasting notes:
Tropical fruits on the nose and very mild spice in the middle of the tongue. Very warming, but no bite from the alcohol. The yeast imparts a sweet, bready flavour with a very mild toasty character. No hops or tannin astringency.
Recommendations:
Would make an excellent holiday ale with the addition of more spice, particularly clove, cinnamon and cardamom. Could up the bittering hops to suit your taste. Since the alcohol isn't on the tongue, watch out! |

Combine the concentrate and the honey in your fermenter. Pour in the water to bring the total to the 5 gallon mark.
Follow the staggered yeast nutrient/energizer procedure. You can add in a half teaspoon of yeast energizer and a half teaspoon of the yeast nutrient before you pitch your yeast.
Then, uh, pitch your yeast.
After that, you will need to mark time and follow this schedule:
**********REMEMBER TO SCALE YOU YEAST ENERGIZER AND NUTRIENT DOWN.!************
Add .5 teaspoon yeast energizer and .5 teaspoon of the yeast nutrient 24 hours after fermentation begins
Add .5 teaspoon yeast energizer and .5 teaspoon of the yeast nutrient 48 hours after fermentation begins
Add .5 teaspoon yeast energizer and .5 teaspoon of the yeast nutrient after 30% of the sugar has been depleted
After primary fermentation is over, rack to another cleaned and sanitized carboy and introduce the oak cubes. I like to steam my oak cubes for 15 minutes before I put them in the carboy.
How long you age it on the oak is up to you. I think I am going to go for a long time on the oak to see how much flavor I can get out of the cubes. |

Notes: Got rims tube water to 162, that was too hot. Need to bump this down. This was the second batch on the new system.
Efficiency went up 10% from last batch. Made my volume for the new fermenter to work correctly. There is a discrepancy between the tilt and the thermowell at the moment, guessing that it is the chiller coil being in proximity to the tilt.
