Kit was given to me to brew, featuring a 9-month old grain crush. BRY-97 yeast was expired, so I'm using my slurry Conan on this.
3, 1oz bags of Simcoe included of unknown storage quality these last 9 months will be used.
Pilsen DME is getting thrown into this recipe because I have an partial bag lying around to get rid of. QP of honey malt same way.
Therefore, I'm going to boil a smaller volume of over-all water (7 gal vs 7.6 gal), increase boil time to 75 minutes (+15 from 60) and then top up to 1.046 not knowing how well the 2-row converts overall. |

Spices; Put 3/4 of the spice mix in boil, Put remaining in a tiny bit of vodka to make an extract sat for a week (Mikey was born!) (add to bottling bucket).
1) did 7gfuggles and 31g tettnang because i didn't have kent goldings Doh! Carb to 2.5 vols. tasted good at bottling! Finished at 1.016 as planned.. Note at bottling: should I take mash temp to 152 vice 154? Revisit once carved/aged..
Taste notes: under carbonated, crashed too long and need to adjust for 5.5 gallons beer vice 5.. All beers seem a bit undercarbbed. This beer is mediocre at best, lacks spiced character.. A lot of body and fermentation character. I guess I just maybe like dryer beers. Add more pumpkin and more spices, mash lower |

Notes: Just brewed this today (7/6/14) at the request of my wife who just had a baby and can now enjoy a beer or two a bit more freely. We hit all the gravity, temperature, volume, etc targets that I wanted. The wort smelled and tasted great, seems like it is going to turn out really good. I will update in a few weeks once I get a taste.
The brew turned out good. It was judged as 32 points out of 50 in a local home brew contest. I think a mediocre fermentation was the culprit. I will brew this again, especially since I have now improved my fermentations by dialing in my fermentation chamber and adding an oxygenation system to my brew gear.
Based on contest comments I will: improve fermentation, beware of oxidizing the grain, mash, or wort, increase the % of oats, and edit the dark grains to achieve more roastiness. |
